Re: Lasagna recipies please

this is the recipe that i use now, it's a slow-cooker/crock pot recipe, and my husband is CRAZY for it. it's from the january real simple:

http://food.realsimple.com/realsimpl...ipe_id=1694908

ETA: this is a vegetarian recipe, so i generally add sweet italian sausage to it b/c that's how my husband prefers it.

Re: Lasagna recipies please

I finally found a recipe I love:
Brown Italian Sausage. Add favorite pasta sauce to sausage and simmer until warm through. In separate bowl mix 1 tub ricotta, 1 egg, salt & papper, dash nutmeg, dried basil, mozzarella cheese. (Can sub some cottage cheese for ricotta).
Put some meat sauce on bottom of pan
Layer of no cook lasagne noodles
Layer 1/3 meat sauce
more noodles
Layer 1/2 ricotta
Layer of slices of zucchini, fresh spinach & fresh basil
more noodles
Layer 1/3 meat sauce
more noodles
layer rest of ricotta and zucchini/spinach/basil
noodles
top w/ rest of sauce and put more mozz and grated parmesan on top to finish.

Here is a cool tip... use eggroll wrappers as noodles they are lighter and don't need to be boiled!

Re: Lasagna recipies please

mine is simple... but OH SO GOOD! I made mine the other day. I switch it up here and there.
Ingredients:
1lb ground italian sausage or hamburger
1 large container of cottage cheese
2 eggs
i large bag of motzerella cheese
1/2 bag of colby jack cheese (dh's fav)
1 bag of spinach
1/4 chopped onion
1 cup chopped mushrooms
1 cup sliced fresh tomatoes
Seasonings to taste (garlic, italian seasoning, basil, oregano, salt, pepper)
I package lasagna noodles
Spaghetti sauce (usually prego with cheese or mushroom flavoring! )

In large pot, cook lasagna noodles
I brown my meat in a large boiling pan. with some seasonings to taste. then drain the fat.
Next i add in the onions, mushrooms, and tomatoes with the meat. then the spinach. and lastly spagetti sauce
in a separate bowl i mix the cottage cheese, 2 eggs, handful of mozerella cheese and some seasonings.

I lay the noodles in a large 13 by 9 pan. then put down the cottage cheese, then the sauce with all my other ingrediants, then some motzerella and colby cheese
then another layer with the same. and continue the process until my pan is full. I usually have some leftover noodles.

Then i put tinfoil over the top and bake on 375 for 35 minutes. then remove the foil and bake for 12 more minutes or until cheese starts to brown!

Re: Lasagna recipies please

OK Finally got my book back, this is paraphrased, BTW I find it kinda bland as is so I add more spices

1tbsp olive oil
lb ground beef or turkey (or whatever meat you want to use)
1tsp salt
1/2 tsp pepper
1 tbsp flour
3 cloves garlic chopped
2 Tbsp sour cream
1/2 c preed sweet potato
1/2 grated parmesan
1 28 oz can or 2 15 oz cans whole peeled tomatoes with juice
1 small onion chopped
1c cottage cheese
1 large egg white (I used the whole egg)
1/2 c cauliflower puree
1 box no boil noodles
2c shredded mozza

Brown meat in fry pan with oil, sprinkle with s & p. Sprinkle flour and 1/2 the garlic once it is no longer pink, cook 1-2 min longer Turn off heat stir in sour cream, sweet potato and 1/4 of the parmesan, set aside

Combine tomatoes and juice onion and garlic and the rest of the parmesan in food processor or blender until smooth. (Or use jarred sauce and just add parmesan), set aside

In the same blender or food processor blendcottage cheese, egg, and cauliflower puree untill smooth

Put 1 c sauce in bottom of 9x 13 pan top with 1/3 noodles, spread meat filling, cover with 1/3 noodles, then spread cottage cheese mixture top with remaining noodles, spread rest of sauce over top, Sprinkle mozza on top. Cover with foil and bake @ 350 till noodles are cooked through around 40 min Remove foil and bake another 10 min till cheese is brown and bubbly

Re: Lasagna recipies please

I love lasagna but mine always turns out not firm. I always see pics of lasagna pieces and they are firm, you can see the layers. I have tried different recipes, but still not good.

I will have to try a few of these recipes.

Re: Lasagna recipies please

You have to let it set a bit when it comes out of the oven. It totally helps it "firm" up. =)
