We do tri color spiral pasta with cucumber, cauliflower, carrots, tomato, and pepperoni tossed in Italian Dressing. I make it and let it sit in the fridge for a while and when the pasta soaks up the dressing it is AWESOME!!

I like to buy the Bacon Ranch Suddenly Salad. Then I add as many fresh veggies to it as I can. It always tastes great.

Re: summer pasta ideas please

We like this cold salad for summer, in fact I have to make it tomorrow as it was requested for the family 4th of July bbq! (it's not pasta but you could easily use pasta instead of the grains)

2c. cooked grain of your choice, cooled (I like Kashi Seven Grain Pilaf, or brown rice or a rice/oats/quinoa blend

4-6 diced sundried tomato slices, reconstituted if you used dry

1 c. colorful cherry tomatoes (the pear shaped ones come in variety packs at our store, red, yellow, orange, burgundy/purple, green) or more to taste

Big handful fresh basil leaves, minced fine

handful of kale, chopped about 1/4 inch square

two tablespoons of finely snipped chives

a teaspoon or two of finely snipped fresh dill, if desired

1/8 - 1/4 c. crumbled feta cheese

Blend all the ingredients and pour Bernstein's Cheese Fantastico dressing over all to taste, toss well. Keep chilled. Just before serving, you can top with cubes or slices of fresh avocado and grated parmesan.
