I shred chicken, add olives, canned tomatoes (diced), Marinated Artichokes. Then I add the tri color pasta. I don't use a dressing b/c the marinade from the artichokes seems to be enough.

Dill in a summer pasta salad really does add a refreshing taste. I like to switch it up and make one with anyshape pasta, squash, zucchini, olive oil, lemon juice, balsamic vinegar, and of course dill.... you could put any vegs you like. My husband actually liked it, maybe yours will too!

This is always a big hit and I actually made it this 4th. You can opt out of the onions of course and it will still taste great.

Italian Style-Pasta Toss


block of feta
6 ounces tricolor pasta
4 ounces sliced pepperoni cut into strips
1 small onion, thinly sliced and separated into rings
1 can sliced pitted ripe olives
cup snipped fresh parsley
1/3 cup olive oil or salad oil
1/3 cup wine vinegar
2 cloves garlic, minced
2 teaspoons dried basil, crushed
1 teaspoon dried oregano, crushed
teaspoon sugar
teaspoon pepper
1 pint of cherry tomatoes, each tomato cut in half
can of kidney beans


1. Cook pasta according to package directions. Drain pasta. Rinse with cold water, drain again. In a bowl toss together cooked pasta, feta cheese, pepperoni, onions, olives, parsley, kidney beans and cherry tomatoes.

2. For dressing, in a screw-top jar or mixing bowl combine oil, vinegar, garlic, basil, oregano, sugar, and pepper. Mix well. Pour over salad. Toss to coat. Cover; chill 4 to 24 hours.

I always double the dressing amount

The longer you wait the better but can be served immediately if needed.

During the process of chilling, toss pasta a few times to spread dressing and help with marinating.
