Menu ideas for funeral luncheon?

I am hosting a luncheon after my husband's grandmother's funeral on Thursday. I need menu help! There will be around 15-20 people (half kids). I was thinking some sort of sandwiches and a variety of salads. Ideas? Recipes?

TIA!

Little hot dogs in crescent rolls, fruit, chips and salsa or dip, Meatballs in crockpot with bbq sauce, horseradish and grape jelly. Couple pans of enchiladas or lasagna.

Re: Menu ideas for funeral luncheon?

Here's a recipe for my favorite pasta salad (we omit the cheese & keep everything in big pieces in case people want to pick anything out):
Dilly Veggie Pasta Salad (from Quick Cooking magazine, March/April 2001)
2 c uncooked medium shell pasta
1c halved cherry tomatoes
1c sliced green pepper
1c shredded cheddar cheese
c chopped green onions
c sliced ripe olives

c olive or vegetable oil
2 T lemon juice
2 T white wine vinegar or cider vinegar
1 t dill weed
1 t dried oregano
1 t salt
1/8 t pepper

Cook pasta; drain & rinse in cold water. Add tomatoes, green pepper, cheese, onions and olives. Whisk together dressing ingredients. Pour and toss to coat. Makes 8 servings
Easy dessert:
Jell-O Magic Mousse
3 c boiling water
1 8-serving size pkg. Jell-O Strawberry Flavor Gelatin
1 tub (16 oz.) Cool Whip, thawed

Stir boiling water into dry gelatin mix in medium bowl at least 2 min. until completely dissolved. Add whipped topping to hot gelatin; stir with wire whisk until whipped topping is completely melted and mixture is well blended. (Mixture will still be thin.) Pour into 10 glasses or a glass bowl sprayed with cooking spray.
Refrigerate for 8 hours or overnight. If using a large mold, unmold onto serving plate just before serving.
Makes 10 servings, about cup each.

HTH!

I would get a couple kinds of lunch meat and maybe make a casserole and couple sides like potato salad or pasta salad and serve a veggie tray with dip and chips.

When I hosted a funeral luncheon I made side dishes and dessert items - pasta salads, veggie tray, fruit tray, potato salad, cookies, date bars, and lemon bars. Then I ordered some fried chicken at a deli for the main course.

For the sandwiches, you could have a variety of bread, meat, and cheese and people could make their own.

Re: Menu ideas for funeral luncheon?

Thanks for the ideas, ladies. I ordered meat and cheese trays for sandwiches and am going to make a couple different salads.

Thanks domestic engineer for the pasta salad recipe--I think I'll give that one a try.

Re: Menu ideas for funeral luncheon?

Don't know if you want to go a little heavier with the food... but at every funeral I've been to (I'm LDS) they serve "funeral potatos" (I think it's called that just because it makes a LOT of food)
http://stage-recipes.ksl.com/recipe-4153i.php

And I've had to promise my mother that we will only be serving Rice Crispie Squares at her funeral (yeah. We're morbid like that).... she's been a dieter her entire adult life... but she LOVES rice crispie squares... and she can never eat them. So, when her time comes.. we will all raise a square to Mom and enjoy them for her.
