Help! Need quick suggestions for vegetarian sloppy joes...
I have cooked pinto beans, hamburger buns and spaghetti sauce.
Hubby is almost off of work. I'm thinking vegetarian sloppy joes are the way to go. Anyone want to help me figure out how to make em?

Here is one for tofu. It is from the Nasoya web site. I use to work in R&D/Quality and help develop this recipe. It did really well in sensory testing.
My family loves it. Best to drain and press tofu before crumbling. Recipe: Sloppy Joes Preparation Time: Quick Prep (<20 min.) Servings: 6 A hearty crowd-pleaser made healthier. Vitasoy USA Brand: Nasoya, Azumaya Meal Type: Lunch, Dinner Dish Type: Entree Cuisine Type: North American Diet Type: Vegan, Vegetarian, Kosher, Bland Product Type: Firm Tofu Ingredients ( T ) = Tablespoon ( t ) = Teaspoon ( C ) = Cup 1 (14 oz) container Nasoya Firm Tofu, crumbled 2 T olive oil 1 medium onion, chopped 1 medium green pepper, chopped 2 cloves garlic, minced 2 T low-sodium soy sauce 2 c tomato sauce 1 T chili powder 1/2 tsp cumin powder 4 - 6 hamburger buns Preparation Method: Heat olive oil in medium saucepan over medium-high heat. Add onion, green pepper and garlic, and sauté for 5 minutes or until tender. Add tofu and soy sauce, and sauté for 5 minutes or until tofu starts to brown. Stir in tomato sauce, chili powder and cumin powder. Bring to a boil, reduce heat, and simmer for 2-3 minutes, stirring occasionally. Serve hot over toasted hamburger buns. |

mash them and add the spaghetti sauce--you are going to get thick and lumpy paste-- kind of like refried beans--that may be good on a soft tortilla with some soy cheese or in your case a burger bun. another choice would be to make bean burgers--mash up the beans, add some bread crumbs and dredge them in some flour and water then fry or bake them and put them on the burger buns with some sauce.

I make them with my own veggie burger. I sautee the burger (crumble style) and then add the sauce mix and simmer to mix well. tastes GREAT!
here's my recipe (invented by DH hence the name): Sloppy Dads 2 28-oz cans crushed tomatoes (or 15-16 roma tomatoes, blended and simmered) 3 cups burger (above recipe) sauteed in pan until golden and crumbly 2 tsp onion powder 2 tsp garlic power 1 tsp cumin powder 1 tsp celery flakes 1 tsp oregano 1-2 tsp celtic sea salt (to taste) combine ingredients in saucepan and simmer 10-15 minutes until thickened. Spoon over grilled buns or slices of roasted garlic bread.
