i started my canning today!!!

i made up some salsa and processing the stewed tomatos right now. maybe i will get wild and crazy and can the beets tommorrow! and maybe some peaches next week. any one else canning these days?

My husband and I are learning to can salmon because he caught enough this summer to comopletly fill our chest freezer. So far we've been successful with two cans - we took them to the cooperative extension to have them look at how we did it (dont want to mess with botulism) and she told us we had too much air space in most of them. I think we'll get it right next time. I don't know if veggies are as particular as fish when it comes to air space. anyways, i'm excited to be learning.

my mom and i canned some bread and butter pickles and dill pickles a couple of weeks ago. i canned some pear butter last weekend. this week i'm going to do some salsa and maybe some pears.

I made 10 pints of hot pepper butter the other day. If I survive my 4 year olds b-day party this weekend, I plan to make pepper rings and spaghetti sauce next week, we'll see.

We did some jam earlier this summer and more recently we've done lots of bread & butter pickles as well as some pickled jalepeno peppers. Soon we'll do some salsa.

I've done some apricot jam and grape jam. Today it's sweet corn...some canned, some for the freezer. I hope this weekend to do some peach preserves and mango chutney. MMM!

I'm new to canning. So far I canned some bread & butter pickles a couple of weeks ago and just did some peaches this past weekend. next up: more pickles, some tomatoes and applesauce.

I must admit, it's a pain in the behind so far! I'm hoping that I'll get better as it as I do it more.

We've done 30 qts of peaches (we picked our own!), 34 qts of tomatoes, and about 20 pts of various pickles (dill, bread and butter, etc.) This is the first year I've done any canning and I'm totally hooked. I've also been freezing veggies....lots of corn, green beans, green peppers, etc. I don't have a pressure canner, so there are quite a few things I can't can (yet!) Hooray for living in a rural area!

canned some salsa today planning on doing some tomato sauce and stewed tomatoes very soon. my mom has soooooo many tomatoes!! we have to buy more jars!

later this month i'm planning for the applesauce, yum!!

So far we've done lots of jam, peaches, salsa and strawberry syrup. We'll do applesauce later in the season along with apple pie filling, apple jelly, apple butter and some pumpkin butter when we get pumpkins in October. We've also put tons of fruit, cherry pie filling, green beans, asparagus and various peppers in the freezer. If the pears on our tree keep growing like they are, I'll have to come up with a way to use those as well.
