My Mood:
Help me think of some more veggies .....

So i'm serving
broccoli
green beans
peas (occasionally)
corn
celery
lettuce
spinach
tomatoes
onions
garlic
peppers
squash (occasionally)
cabbage (occasionally)
avocado (rarely because of price and fat content)
cumbers (also occasionally since my los dont like them )

using potatoes and sweet potatoes sometimes as a second side
not carrots because kids and dh dont really like them - once in awhile in soup or stirfry is it

I feel like we are eating the same veggies all the time Its to get the kids eating enough servings and have a good choice to go with 2 meals a day

What am i missing that you use?

artichokes
mushrooms

I love to make a stirfry side of zuchinni, onions, garlic and mushrooms sauted in butter and EVOO with a little pepper and parm. cheese over the top

i didnt even of artichokes - i really like a healthy spinach artichoke and so do my toddlers

and i should make them mushrooms - i know the oldest likes them even if i dont

Winter squash,so many varieties,so yummy and nutritious. Beans,beans beans! Very versatile. Oven sweet potato fries! Experiment with different types of greens. Try oven roasting carrots with evoo and honey!

How about leafy greens like swiss chard, collard greens, various varieties of kale, etc.

summer squash
fennel
kohlrabi
sweet potatoes (some consider them starches but we don't)
sugar pod peas
beet greens (very sweet)
turnip greens (great raw!)
sprouts
carrots
swiss chard (kids LOVE the new "bright lights" version that's pink/red/orange/etc)
eggplant

my kids love asparagus in stir fry or sauteed with tamari.

Yes! And technically so is cucumber, eggplant, any squash, basically anything full of seeds. And most nuts are really fruits (tree nuts). And avocado is a fruit. And corn is a grain. And peas, edamame, peanuts are really legumes.

Vegetables are basically either roots, leaves, or cruciferous (like broccoli, cabbage, etc.).

But hey, they're all good for you, right?!
