Toddler foods...any ideas for healthy finger foods?

My 15 month old used to be a good eater, but recently he only wants to feed himself and he fights us when we try and feed him. I'm at a loss for what to make that he can feed himself. Pretty much the only thing he'll eat from us is applesauce (sometimes) and macaroni and cheese...not exactly the healthiest diet.
I've been putting peanut butter between graham crackers and letting him eat that so he'll get some protein. He also likes cheese, so he gets that, and he drinks milk at least 3-4 times a day.
Does anyone have any ideas how I can sneak some more veggies or protein into his diet? I feel like he never gets a complete meal, he just eats bits and peices of what he should be eating...any suggestions?

My DS would (and still does) down green beans, corn, rice, any kind of beans, grapes, apples and broccolli cut really small. Actually, he'd eat anything. The key was to have it cut small enough that he wouldn't choke on it. I think DS was close to this age when we gave him a baby spoon or fork and let him eat on his own.

I would just offer him lots of snacks all day long if he's not eating much at one time.

canned carrots were a favorite of DS's. Also, green beans, peas, diced apples (any fruit really, peaches, plums, pears, etc) baby corns, quartered grapes, any kind of well cooked beans (rinsed), diced cheese, noodles, diced tomatoes, rasberries, diced melon, crackers, rice cakes, gold fish, avacado, tofu, large curd cottage cheese (rinsed), all worked well for us.

The "Just tomatoes" variety of dried veggies and fruits would be a good option. I agree, that cutting the fresh or cooked veggies up small enough is key.

Diced fruits, steamed veggies, beans (cut in half or smooshed if necessary), whole grain pasta.

Ditto on cutting up the fruits and veggies into little bite-sized pieces. I know it's messy, but I also let him pick up his own mac 'n cheese and he will eat the heck out of it, and you can make your own so that it's healthy. It's easy to stick veggies in something like that, too.

My guys were around 15 months when we let them try spoon feeding themselves, so as a pp suggested, you could try letting him feed himself things like applesauce, yogurt, oatmeal, cottage cheese, etc. and see how it goes. I think they like the challenge.

We always offer a variety of healthy choices for their meals/snacks, so even if they don't eat everything, they'll always be getting something nutritious. I didn't really make "special" meals that were just for them. They ate the same things that DH and I ate. From quite an early age, my guys loved meat, so luckily it wasn't a problem. I'd just slice it really thin so that they could pick it up easily and they wouldn't choke on it. You could also try scrambled eggs, either plain or add cheese and/or sliced ham, onions, brocolli, red or green peppers, tomatoes. We also give them steamed veggies, or fresh veggies if they're cut small. Last summer (at 18 months) they started eating corn on the cob and absolutely loved it. You could also make your own mini-pizza's with english muffins as the crust and add lots of different toppings - he can even help make his own. Grilled cheese sandwiches are also a favorite at our place.

My DD's 15 months old, and she's doing the exact same thing. I just let her feed herself. I give her a fork and/or spoon, and let her go. She makes a mess, but it's easier than fighting with her. She's loves beans, so I often just put a bunch on her high chair tray, and she can eat them without making too much of a mess.

Avocado is the best! Very healthy and most toddler love it for it's mild and creamy flavor. I also give my daughter Kagome juice sometimes, it is made mostly from vegetables, she loves the "Purple Roots and Fruits" which has beets, purple carrots, radish juice and watercress mixed with some grape juice. It helps to fill in some gaps if your lo likes juice a lot.
