Peanut Butter Cookie Bars

You know how you can take choc chip cookie dough and put it in a jelly roll pan to bake instead of doing individual cookies? Can you do the same with peanut butter cookie dough? Or do you need to use a different recipe and if so, do you have one?

I've been doing the bars instead because it's so much easier to put it all in the pan and cook it all at once instead of doing 5 trays of individual cookies. Takes half the time in the kitchen too!

Any other really easy cookie recipes like this would be great too! I love cookies but don't always have hours upon hours to stand in the kitchen to bake them.

I have a yummy recipe for pb bars and I thought it was pretty easy to make. I made a bunch for the holidays last year. I will try to find it and get back to you.

GLazed PB Bars

3/4 cup butter softened
3/4 cup creamy pb
3/4 cup sugar
3/4 cup brown suger packed
2 teaspoons water
2 eggs
1-1/2 tsp vanilla
1-1/2 c flour
1-1/2 c quick cooking oats
3/4 tsp baking soda
1/2 teaspoon salt

Glaze:

1-1/4 c milk choc chips
1/2 c butterscotch ships
1/2 c creamy pb

For the bars cream together butter, pb, sugars and water. Beat in eggs and vanilla. Combine flour, oats, baking soda, and salt. gradually add to creamed mixture. Spread in greased 15x10 in baking pan. Bake at 325 for 18-22 minutes or until lightly browned.

For the glaze in a microwave safe bowl or on stove top melt chips and pb. pour over warm bars and spread evenly. Cool completely before cutting.
