I need some yummy quick vegetarian meals

I gone threw 2 of my vegetarian cook books and cannot find anything to make for dinners that I haven't already made. I'm kind of a picky eater...I'm not a fan of peppers, olives, onions (unless they are very small) and a few more but I won't list them all. I'm pretty big on pasta's but try to limit it to 2 pasta dishes a week. But I'm running out of ideas!! We want something new...but something that doesnt take over an hour to prep! Please, someone, anyone give me some yummy vegetarian recipes! Thanks!

I've been into quinoa lately for dinners. Ds loves it and I can throw in any veggies lying around in the fridge and it's a complete meal in one pot! I usually throw the veggies on the frying pan with some garlic and olive oil and then add some veggie broth or tomato sauce to the water with the quinoa. It cooks in like 20 min and tastes great!

enchiladas? (black beans, sauteed zucchini, cheese if you eat it)
tacos? (don't NEED to use onions, etc)
pizza? (pre-cook the crust and keep in freezer)
sloppy joes?

we like "meal salads" where you mix baby greens with things like garbanzos, cold peas, sliced almonds, various veggies and toss it all with dressing.

Stir fry over pasta or rice -any veggies fried with sauce (1cup water, 1 veg buillion cube, 2 tsp. cornstarch)
tacos made with frozen veg crumbles- takes less than 5 minutes
burritos made with rice veggies fried tofu cheese
tortellini soup- veg stock with veggies and tortellini
