share your fave veggie meal

we are slowly going veggie and i am trying to findout what recipes or ideas we like so that i can plan more meals. no tofu yet. i have to learn to hide it first!!hehe tell me your fave meals that have no meat! hot or cold!

I've been veggie since I was 11, and dh is veggie at home with me. We eat a pretty good variety of stuff. Trust me, tofu WILL become your friend eventually. That way you can just sub tofu in a lot of good looking recipes. In the meantime, there is lots of other stuff. I don't know how easy or complex you want the meals to be. We do lots of stir fries, pastas, casserole type dishes (pasta with different sauces and cheese bakes, or rice, sauce and cheese bakes), etc., and good greens/other veggies on the side. I suggest getting the book 'Vegetarian Planet.' We use it a lot. How about this for some EASY last minute burritos:

Flour tortillas
Refried Beans
Shredded sharp cheddar cheese
Green leaf lettuce
Chopped tomatoes
Fresh sliced avocado
Salsa
Sour Cream

Just prep everything, heat up your beans, warm your tortillas, and pile it on!

lasagne, enchiladas, pizza, burgers (with freshly made onion buns), mac n cheese, chalupas, stir-fry, hmm...

well ihave some great ideas but we'll have to wait until later today i guess as ds has his dietian appointment(has prader willi syndrome) so they may keep him off carbs till which throws a whole new loop in! going to get tought being a veggie and carb free! those burritos sound yummy!!

Here's one we love, and it's very flexible. We do a lot of stews and soups, esp in the cooler months. Minestrone is a great soup that I do variations on at least 1x/month. I also really like curries - lots of veggies and some chickpeas. And egg dishes are always good for protein - omelets, stratas, frittatas, etc.

Black Bean and Sweet Potato Stew

1 can or 2 cups dried (soaked and cooked) black beans
1 onion, diced
1 small green pepper, diced
1 clove garlic, minced
1 large or 2 medium sweet potatos, peeled and cut into 1-inch dice
1 small can tomato sauce
cumin, chili powder, salt and pepper to taste

Saute onion and pepper in a splash of olive oil. Add garlic, sweet potatoes, and black beans, and saute for a few minutes more. Add tomato sauce and spices. Add a cup or so of water, depending on how saucy you like it, and simmer for 15-20 minutes, or until sweet potatoes are tender. If desired, you can add some minced chipotles in adobo, tabasco or other hot sauce, or fresh cilantro. I like to serve this on brown rice, but it would be good on white rice, as burrito filling, or just by itself.

Yum!!! Dang it, I just used the last of a big bag of sweet potatoes. I'll have to get some more to try this! Sounds easy and yummy.

At least once a week, we sit down to big bowls of black beans over white and brown rice (mixed together; DD won't eat it any other way), and topped chopped onions.

One of the easier meals that I make, and we all love it.
