Thumbs up Re: What's your fav. crock pot recipe?

Oh my goodness!
This one is a winner in our house!
The kids gobbled it up...and DH had 5 bowls!!
We ate ours with rice and some corn chips!
I made a lot so we would have leftovers....but no such luck! We ate it ALL!

Crockpot Salsa Chicken
4-5 chicken breast (can be frozen)
1 can black beans
1 can corn (I drain it)
1 jar salsa
1 block cream cheese

Dump everything but the cream cheese in the crockpot. Cook for 4 hours on high. Toss in the cream cheese and allow to melt. Stir together and serve.

--------------------------------

I serve it over rice or pasta.

Re: What's your fav. crock pot recipe?

this is my absolute favorite crockpot recipe -

Hot Fudge Spoon Cake!!

3/4 C all-purpose flour
1/4 cocoa powder
2/3 C sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 C milk
1/4 C (1/2 stick) unsalted butter, melted
1 tsp vanilla extract

topping:
1/4 C cocoa pwder
1/4 C sugar
1/4 C packed brown sugar
1 1/2 C boiling water

Spray the inside of the crockpot with cooking spray. To make the batter, mix the first five (dry) ingredients together in a bowl. Make a well in the center and add the wet ingredients, stirring until you have a smooth batter. Spread it evenly in the crockpot.

Mix all the topping ingredients together in a bowl until smooth. Gently pour over the batter, do not mix in. Cover and cook on HIGH until puffed and set, about 2 to 2 1/4 hours. Turn off the crockpot and let stand, covered for at least 30 minutes. Scoop into bowls and serve with vanilla or coffee ice cream.

This makes just enough for 4 but leaves you wanting more!

This comes from "Not Your Mother's Slow Cooker Cookbook."

Re: What's your fav. crock pot recipe?

I have one!

Cincinnati Spaghetti (also called Cincinnati Chili) - This is sweet, like a German chili

Cincy chili is served 5 different ways.
1-way chili in a bowl
2-way chili over spaghetti
3-way chili over sketti add cheddar cheese
4-way chili over sketti topped w/ onions then cheese
5-way chili over sketti topped w/ onions beans and cheese

2 lbs ground meat
46 oz (the big can) tomato juice
2 tbl dried onion
1 tsp Worcestershire
1.5 tsp salt
3 beef bullion cubes
3 tsp chili powder
3/4 tsp cinnamon
3/4 tsp allspice
3 tbl white vinegar
1/2 tsp garlic powder

MOP
Brown meat and drain.
Put meat and ALL ingredients into pot and cook for at least 3-4 hours. the longer it cooks the better it tastes!

This is DELICIOUS. It makes great left overs as well!

what does MOP mean?
sounds good, I love chili over spaghetti and I personally use cheese and onions. I usually put the beans in my chili but I'm from Texas originally.
