one of my favorite, easy recipes is to take a whole chicken, clean it, season it inside and out, shove a whole onion up it's butt and put it in the crock pot on low for 12 hours. don't add any liquids or anything. it cooks in it's own juices and comes out super delicious!

another good one is taco soup. it was actually a recipe i found when i was doing weight watchers and is only 2 pts per cup and really filling!

Taco Soup
1 lb lean ground round beef
1 large onion, chopped
1 package taco seasoning mix
1 package Hidden Valley Ranch Dressing mix
1 16oz can pinto beans
1 16oz can chili beans
1 16oz can black beans
2 16oz cans whole kernel corn
1 16oz can stewed tomatoes
1 16oz can diced tomatoes and chilis (i.e. Rotel)
1 small can diced green chilis
8 oz V-8 regular flavor
2 cups water

Brown beef and add all ingredients to crock pot. Put in crockpot in the morning and let simmer on low until dinner time.

i left out the corn. it's a texture thing. this recipe is really low fat and really high fiber and tasty. super yummy.

i am definately gonna have to go through this thread and try some of these recipes! they sound soooooo good and i'm always on the lookout for new recipes!

My favorite recipe is Crock Pot Italian Chicken....

4 frozen chicken breasts
1/2 cup water
1 package of Good Seasons Italian Dressing Mix.

Place chicken breasts in the bottom of your crock pot
Pour water over
Shake dressing mix over the 4 chicken breasts

Cooking Time: This varies... My CP is really hot so I can cook this on LOW for 5-6 hours. So the first time you make it you may want to be around to check on it but it is the best! So yummy and so tender!

I made a chicken/broccoli/rice casserole yesterday. 2 lbs chx breast, 1.5 cups dry rice, 3 cup h20, 2 cans cream chx soup, 1 bag chopped broccoli, garlic, pepper, salt, stir it all up, cook for 3-4 hours. I cooked for 5 and the rice was mushy but that was my fault. Flavor was good and picky picky picky ds actually ate it... You could add cheese (velveeta or cheese soup) I didn't because ds is lactose intolerant...

I have to confess that I am 31 years old and have never used my crockpot-its still in its box I just copied and pasted a bunch of these and I"m going to make the slow cooker scalloped potatoes with ham tonight Great thread!

Tortilla soup

3-4 cooked & shredded chicken breasts
1 garlic
2 cans chicken broth (4 cups)
2 cans chopped stewed tomatoes
1 cup salsa
1/2 cup chopped cilantro
1 Tbsp cumin
8 oz Monterey JAck cheese (or whatever)
sour cream
tortilla chips

Add minced garlic in 2 Tbsp butter in crockpot on high. Saute.
Combine all other ingredients except cheese, sour cream and chips.
Cover. Cook on low 8-10 hours/high 4-5 hours.
Divide cubed cheese into bowls and ladle soup over top. Sprinkle with chips and a dollop of sour cream.

DD is restless and I just got page 15 and haven't seen my fave so here it is. Sorry if it is a repeat.

Mexican Pork
1lb Boneless Pork Loin Roast, cut into 1 inch pieces
2 1/4 c. Chunky Salsa
1 Can Green Chiles, drained (if you don't like the heat they do make mild)
1 Can (15oz) Drained, Rinsed black Beans
1 Cup Cheese

Mix pork, salsa, and chiles.
Cover; cook on Low for 6-8
Stir in beans. Cover; cook on low heat about 5 minutes or until beans are hot. Sprinkle with cheese.
Serve over rice or we eat as soft shell tacos with salsa verde.
