The pork chop/stove top/apple pie filling recipe was DELICIOUS. We don't do pork ever really in the house (besides bacon) so I was a bit nervous buying pork chops, but totally going into regular rotation at least for fall/winter (since it's like winter nummies in a crock pot, lol)

One of the most made meals I've made in the crock pot is
Broccoli Chicken

3-4 chicken breasts
1-2 small cans of cream of broccoli (I use fat free)
Fresh broccoli

Place the chicken breasts in the crock pot, pour the cream of broccoli on top, if too thick, thin it w/some milk and cook on high for 4 hrs. After that add the broccoli florets on top of everything for another 15-20 mins (depending on how hard/soft you like your broccoli) and it's done.

Serve over rice, super yummy and quick.
I am totally so sick of not being able to come up with menus for us and I literally have no time to be slaving in the kitchen, this thread is awesome!

DH is at the grocery store now getting the ingredients for the Chicken and Broccoli along with 3 other meals from this thread.

I feel such relief. Thanks!

I second tortilla soup--all soups in the crockpot usually turn out good! Pair that with fresh bread made in the breadmaker....mmmmmmmmmmm

Whew, made it to page 5 and decided I had to share mine We're vegetarians here, so all these are meatless.


These are on next week's menu. I use my crockpot 3-4 times during the week

Special Beans
16oz can kidney beans
16oz can small white beans
16oz can butter beans
16oz can small red beans
1 cup chopped onions
2 tso dry mustard
1/2 tsp hickory smoke flavoring
1/2 cup dark brown sugar
1/2 cup honey
1 cup barbeque sauce
2 tbsp. apple cider vinegar

1. Combine all ingredients in slow cooker
2. Cover. Cook on low 6 hours.

*We often bring this to potlucks, esp. BBQs - all the non-vegetarians tell me it goes amazing with hotdogs or hamburgers
*If you like souper beans, do not drain. If you want them drier, drain the juices before adding

Diet Soup Unlimited
4 cups water
2 cups tomato juice
2 vegetable (or beef) boullion cubes
1 tbsp. soy sauce, optional
1 tsp. sweetener, optional
1 cup sliced cabbage
2 carrots, sliced
1 celery rib, sliced
1 onion, sliced
2 cups frozen green beans
1 tsp. salt
pepper to taste

1. Combine all ingredients in slow cooker.
2. Cover. Cook on low 4-8 hours.

We love this tasty, low calorie soup around the holidays. It improves in flavor the longer it cooks.


Onion Potatoes

6 medium potatoes, diced
1 cup olive oil
1 pkg dry onion soup mix

1. Combine potatoes and olive oil in a bag. Shake well.
2. Add onion soup mix. Shake well.
3. Pour into slow cooker.
4. Cover, cook on low 6 hours or high 3 hours.

*Add more zest by stirring in one small onion, choped, 1 bell pepper, chopped, 1/2 tsp. salt, and 1/4 tsp. black pepper after pouring potatoes in slow cooker. Continue with step 4.


Snack Mix

8 cups Chex cereal, of any combination
6 cups from the following: pretzels, snack crackers, goldfish, Cheerios, nuts, bagel chips, toasted corn
6 tbsp. butter or margarine, melted
2 tbsp. worcestershire sauce (We use a vegetarian version that omits the anchovy ingredient in the sauce FYI)
1 tsp. seasoning salt
1/2 tsp garlic powder
1/2 tsp. onion salt
1/2 tsp. onion powder

1. Combine first two ingredients in slow cooker.
2. Combine buitter and seasonings. Pour over dry mixture. Toss well until mixed.
3. Cover. Cook on low 2 hours, stirring every 30 minutes.

Cafe Rio Pork

3 lbs pork roast
salt and pepper
1 cup brown sugar
2 cups salsa

Season pork with salt and pepper. Place in crockpot. Pour brown sugar and salsa over top. Cover and cook on low for 7 hours or 5 hours on high. Remove from crockpot. Trim fat. Shred meat. Return to crockpot and cook for an additional 30-60 minutes. Serve with taco fixings.

I just revisited this thread and was glad to see some new recipes. I am watching my 3 nieces and nephew for the weekend so it was time to gather up more yummy recipes!
