I can't wait to have DH go through this thread. He says he's on board to using the crock pot more often (ever's only been used for pulled pork for family events) and now he won't have an excuse not to try some of these recipes. Though looking through these being preggo and right before dinner time was not smart I hope people keep this thread up for longer too!

Here's one my family is loving right now! A meatless sloppy joe!

Sloppy Lentils Recipe

1 1/2 c dried brown lentils, picked over & rinsed .
1 medium yellow onion, sliced .
fresh ground black pepper .
1 tbsp chili powder .
1 tbsp light brown sugar .
2 tbsps tamari or soy sauce .
1 small red bell pepper, sliced (or green bell pepper) .
3 c water .
1 (14 1/2 oz) can crushed tomatoes .
1 tbsp olive oil .
1 tbsp prepared mustard .
1 tsp salt

Step #1 Heal the oil in a skillet over med-heat/flame; add in the onion & bell pepper; cover, & cook about 5 mins, until softened.
Step #2 Add in chili powder, stirring to coat.
Step #3 Transfer mixture to a slow cooker (aka crockpot); add in the lentils, brown sugar, mustard, tomatoes, tamari, water, salt, & pepper; stir this to mix.
Step #4 Cover up & cook on LOW for 8 hrs.
Step #5 Serve sloppy-joe style on warmed buns.

Red Beans & Rice

Ham - I'm guessing about 1 1/2 lbs - chopped into bite sized pieces
1 large or 2 medium onions
6 - 8 cans of red beans/kidney beans
1 or 2 cans of Rotel

Throw all into large crockpot. Amounts can vary based on ingredients available.
Cook 8- 10 hours. About 30- 60 minutes before serving open up & mash some beans to make "gravy" creamy. Serve over rice.

Here are a few that my mom taught me...

1 bag of meatballs frozen
1 bottle heitz chili sauce
1 can ocean spray cranberry sauce

mix together in a saucepan chili sauce and cranberry sauce Pour over meatballs in crockpot. cook 4 hours on high!

BBQ Beef
beef roast
1 12 oz can coke ( regular NOT diet)
1 bottle heintz chili sauce
1 package dry lipton onion soup mix

put beef into crock pot. Mix the rest and pour over meat. cook 4+ hours on high. Beef will fall apart. I know it sounds weird....but will make a bbq sauce.

I know this is not a recipe but I thought it was worth mentioning Just remembered sister in law told me this. I do a lot of cooking and freezing. I like shredded pork or chicken. I will make a whole bag of chicken at one time and freeze it. To shred fast put cooked chicken into a kitchen aid mixer with paddle attachment. turn on and you will see it shred, mix to your satisfaction!!!!

Easy Crock Pot Salsa Chicken

4-5 frozen boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind we love peach mango or mango pineapple
1 (8 ounce) package cream cheese

1 Take 4-5 frozen boneless chicken breasts put into crock pot.
2 Add 1 jar of salsa, 1 can of black beans, drained and 1 can of corn, drained.
3 Cook on high for about 4-5 hours or low 6 8 hours until chicken is cooked.
4 Turn off and use forks to shred chicken.
5 Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.

To serve, use chicken mixture as filling inside tortillas or over rice.

2 eggplants - sliced into 1/2-inch rounds
1/2 cup seasoned dried bread crumbs
1/2 cup grated Parmesan cheese
1 jar (24 oz size) marinara sauce
12 ounces mozzarella cheese, thinly sliced

Coat slow cooker with nonstick cooking spray. Combine seasoned bread crumbs with the Parmesan cheese. In crockpot, layer one-fourth of the eggplant, top with 1/4 of the crumbs, 1/4 of the marinara sauce and 1/4 of the Mozzarella cheese. Repeat layers. Cover and cook on LOW for 4 to 5 hours.

3-4 boneless skinless chicken breasts
2 cans french-cut green beans, drained (or your favorite style)
1 can of cream of mushroom soup (or your favorite cream soup)
1/2 soup can of milk
1 small can of french-fried onions

In a bowl, mix the cream soup, milk and the onions. Stir until well mixed. Lay chicken in the bottom of the crockpot. Pour soup mixture on top. Cook on low setting for 6-8 hours. Halfway through cooking (at 3-4 hours), dump both cans of green beans on top and stir a little bit. Top with more fried onions. Enjoy!

Easy Chicken Parm.

Mix one jar of whatever kind of spaghetti sauce you like with 1/4 cup parmesen cheese. Pour over 4 chicken breasts. Cook on low for 6-8 hours or high for 4. Last 15 min add 1/2-3/4 cup mozza on top of chicken breasts.

Serve over pasta or as is with a salad or steam veg.

This is in my crockpot right now and it smells SOOOO good! I can't wait to eat it tonight! I'm making Hashbrown Casserole and peas to go along with it and I'm considering putting that Chocolate Spoon Cake recipe into my backup crockpot for dessert.

This is one that is quick and easy:

4 cans cream of chicken soup
3lbs boneless, skinless chicken breast portions - frozen or thawed
1/4 - 1/2 cup garlic powder

Grease crockpot and lay chicken in the bottom. Pour soup on top and sprinkle garlic powder over it. Toss and mix until it's all well coated and evenly distributed in the crockpot. Cook on low for 4-6 hours until chicken is cooked through. Serve over hot cooked rice or egg noodles.

(If you don't like to use canned chicken soup, you can make homemade cream of chicken soup by making a roux and adding in milk and chicken bouillon cubes or chicken stock.)
