LOVE this thread! My crockpot is in use right now but I can't wait to try some of these recipes. I saw many people talk about cooking a whole chicken which I do all the time and then use the chcken for soups, casseroles, enchiladas, etc. My fav thing to do though is make stock with it!

EASY CHICKEN STOCK
after you pull the meat off a whole chicken put it back in the pot with all the juice, bones skin etc, fill wiht water and leave it on low for another 6 hours or so. It makes the best stock for soups! I refrigerate that and skim off the fat and freeze for later. YUM!

When chicken legs go on sale at our local Lucky's (usually .59 / pound) I buy them, stick them in crockpot, along with lots of nutritious veggies (carrots, celery, onions, red bell peppers), and pour over them a marinade made of pineapples, soy sauce, garlic, ginger, sesame oil, minced onion, lemon juice, and honey.

I let it go for 6 hours on low and it's heaven!!

BBQ Beef brisket-
Brown your brisket on the stove. Pour a little bit of some kind of liquid in the bottom of the crock pot, to cover about 1/4 inch high (red wine, apple juice, soda, etc.) Lay your brisket in, slice a whole onion and lay the slices on the brisket, then pour a whole bottle of your favorite BBQ sauce over the whole thing. Cook for 8 -10 hours on low...AMAZING!!!

Chicken taco meat-
Put a package of chicken parts (whatever you like) in the crock pot, pour a cup of your favorite salsa on top, add a small can of green chiles and 1 diced chipolte pepper in adobo sauce. Cook on low for 6-8 hours, shred, and use for tacos, burritos, or enchiladas!

These are both awesome to do a double/triple batch of and put a bunch in the freezer for quick meals.

I love this thread! I have made quite a few of them!

Here is my version of Pot Roast

1 Pot Roast-whatever is cheap
1 Pkg. Onion soup mix
3/4 Can Coca Cola Pop
Potatoes
Carrots

Place Pot roast on bottom of crockpot, place Potatoes and Carrots around edges. Dump package of onion soup mix on roast and rub in a bit. Pour 3/4 can coke over roast. Cook 8 hours on low. . . .SUPER good!

This is another favorite of mine

Cheesy chicken and Rice
Place chicken breast on bottom of Crock pot. Pour some instant Rice around chicken. Pour in 1 can Cream of chicken soup and 1 Can cheese soup. Add some water so its not too thick. Cook for 4-6 hours on low.
