I love, love, love my crockpot...grew up in a crock pot household. Anyhow, here's one:

Super Easy Chicken Enchilada crock pot stew:

2 cans chicken broth
2 cans water
1/2 cup Masa Harina
3 cans white breast chicken meat, don't drain *
1 can Green enchilada sauce
2 cans black beans
1 can ro-tel tomatoes
2 cans corn
2 tsp. cumin
1 dash cayenne pepper
salt and pepper to taste
1 lb velveeta cheese, cubed

Combine broth, water and masa harina in crock pot and stir until lumps are mostly gone or gone. Than add the rest of the ingrediants except cheese and let cook on low for 6-8 hours or on high 3-4 hours. Add cheese approx. 30 minutes before serving to melt and then mix into stew. I serve in bowls with crushed tortilla chips, shredded cheddar cheese, a spoonful of salsa and a dab of sour cream on the top. If I have fresh cilantro I add some of that freshly chopped to the top also.
* You can substitute your own chopped cooked skinless boneless chicken breast meat, of course, about 1 1/2 lbs to 2 lbs.

Serves 6-8 at least, I have four children that are eating solids, lol and a hugry dh and we always have leftovers. :-)

I made this one tonight in my brand new crock pot ( ). It is awesome!

Nothing magical to it, it's just that you have to cook it long enough for the pasta to cook and then it's done! I love lasagna, but I never make it b/c I'd have to cook the pasta, THEN make the dish. But if you do it this way you just throw a bunch of stuff together and leave.

These recipes are great.

I have discovered the tomatoes w/ chili seasoning. I use it on chicken, pork & beef. Just add the can to the meat and cook on low all day. When it is done I stir things in like corn, black beans, olives. It is great by itself or as a filling for enchiladas, tamales, or tacos.

I was about to post and ask for crock pot recipes. We are renovating a house and dh gets off at 4. So we will be heading out to the house for a few hours before supper to work a bit. So if I can throw something in before we leave we won't be eating out every night for the next few months. I have chili in the crock pot now for tonight but will be scoping out to see what I have ingredients for to use for the rest of the week.

I just put this in the crock for dinner tonight!!!!
