Well, I see this post is from a long time ago.

I don't have any recipes to list right now, but this book might help. I key worded "slow cooker vegetarian" and there are 3 or 4 other books as well.

ETA: Well, I checked and the link is not working for me. It's at Amazon "Fresh From the Vegetarian Slow-Cooker" by Robertson.

Combine the first four ingredients and rub over both sides of chicken breasts.

Place in a slow cooker (crock pot). In a bowl, combine the soup, sour cream, and wine or broth; stir in mushrooms.

Pour over chicken. Cover and cook on low for 6-8 hours or until chicken juices run clear. Thicken sauce if desired.



Salsa Verde Stew: my all time favorite crock pot recipe!

1 1/2 lbs stew meat
4 medium potatoes, cut in cubes
1 large coarsely chopped sweet onion
1 green sweet pepper chopped
1 14 oz Mexican style stewed tomatoes
1 15 oz can pinto beans, drained
1 cup salsa
2 cloves chopped garlic
1 teasp cumin
flour tortillas

Combine all ingredients, cook for 6-8 hrs.
Ok, this looks so good that I had to try it!! I am making it right now! I hope the family likes it, because it is easy to make!! I am making the sour cream chicken one!!!

We made it last night. Dh and I loved it. The kids weren't as excited. I think I'll serve it over pasta instead of rice next time. It seems that whenever I serve something over pasta, it's a hit with the kids.

Oh, that's what I did! Dh wanted it over penne pasta . . . probably why ds liked it so much because he loves pasta!!

My husband calls this one PORK CHOP YUMMYS!!!!

4-6 porkchops
1 can of apple pie filling
1 box of stove top pork stuffing.

...prepare the stuffing as directed on the box.

put the chops in the crockpot, top with apple pie filling and then the stuffing. Cook on low for 3-6 hours. (it depends on the thickness of the chops)

I find the thiner ones cook in about 3 hours on low.
