Enchiladas are always good to make. One thing I've never tried and just heard of is Turkey Bread Pudding. Has anyone tried it before? Here is a recipe...
Savory Turkey Bread Pudding

4 Large Brown Eggs
2 cups Whole Milk
2 tsp. All Purpose Flour
1 tsp. Italian herb blend
About 1/2 tsp. salt
Freshly ground pepper
1/2 cup shredded jack or jalapeño jack cheese
1 package (4.5 oz.) Seasoned Croutons
2 cups cooked cubed turkey

1.Preheat oven to 350°. Spray a 9-inch square baking dish with cooking oil spray.

2.In a large bowl, whisk together eggs, milk, flour, Italian herb blend, and salt and pepper to taste until blended. Stir in cheese, croutons, and turkey.

3.Pour into prepared dish.

4.Bake for 35 to 40 minutes or until top is toasted and custard is set.

5.Let set 10 minutes before cutting into squares.

Turkey pot pie:
1 bg frozen soup veggies, thawed and drained
1 cn cream of chicken or leftover turkey gravy
2 Tbs milk (if using cream of.. soup)
1-2 cups chopped turkey (depending on how "meaty" you want it)
2 tbs butter
salt and pepper to taste
cornmeal muffin mix (I use jiffy)

Preheat oven 350, melt butter in sauepan, remove from heat, stir in drained veggies, turkey, soup/ gravy (and milk if needed), salt and pepper, add to a 2qt casserole dish

Prepare muffin mix as directed on package

Drop muffin mix on top of casserole (don't spread, just drop)

Heat for atleast 30min or until muffin mix is cook through

Sheppards Pie is good just sub in the turkey for the beef. You can get the recipe off of Cooks.com. They have some great ideas for recipes and ive used alot of them from there. Good Turkeying. Next time send some home with friend and family that come over to eat with you all. LOL. You can freeze some for later also. That is what im doing tonight cause i dont want any more turkey now. Will have later when im not sick of it. LOL.

my mom took our turkey to make turkey soup and turkey lo-mien. she might make some stock too, i'll have to ask her.

Turkey sandwiches and wraps
Rice with shredded carrots, celery, broccoli, turkey, braggs amino acids, and hemp oil.
Freeze the bones for stock and 'picked' meat for soup and pot pies ~ this is for later so I don't get too sick of turkey.

We did turkey too.
It was so good, but I get turkey'd out after 2 days. Our sides are gone and we are going out of town tomorrow.
Yesterday DH de-boned it and we will chop it up in the Oster and freeze later for cresent roll wraps (turkey, cream cheese, some seasoning, cheese, wrap in a cresent "pocket" and bake.YUM!) and we might make some more gravy and potatoes to eat the rest later on. But it won't come out of the freezer for another month. Again, turkey'd out!
