Dairy free waffle recipe?

I bought a waffle maker a couple weeks ago and finally made waffles this weekend. The only problem is dh is lactose intolerant and the only thing I had on hand was some pancake mix. The waffles turned out great, but they were fluffy like pancakes not really like waffles at all. I had some bisquick mix but the waffle recipe on the box used milk and dh can't have it. I did a search online but there are tons of recipes and most use milk. I don't really want to go through trial and error and was hoping someone has a good recipe already. TIA

I buy the krusted belgain waffle mix from the store. I'm pretty sure it just takes eggs and water and I love it! Check it out and see if it really is milk free

you can use soy milk to replace the milk without any noticable effects.

Here is a Recipe for Banana-Nut Waffles from Veganomicon. (I LOVE this book!)

1 3/4 cups soy milk
1/4 cup water
2 teaspoons apple cider vinager
2 average sized bananas
3 tablespoons canola oil
3 tablespoons pure maple syrup
1 teaspoon vanilla extract
2 1/4 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking sugar
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup walnuts, finely chopped
non stick cooking spray

mash the bananas and add all the wet ingredients. In another bowl combine the dry ingrediants. Add them to the wet. Do not overmix.
