i have never posted here much, but just lurked. i have a recipe that i love so much i have to share it.
original recipe is cheesey hash brown casserole. one bag of hashbrowns, frozen, the shreaded potatoe kind, not patties one can cream of chicken 8oz sour cream 1stick melted butter colby jack cheese, about 2c shreadded minced onion, fresh or dehydrated salt and pepper corn flakes. melt butter and add onion. then add "wet ingredients ;and mix well then add your potatoes (they say to thaw them first, i dont but it does mix easier if they are) and cheese. spread into a casserole dish. melt a little mor butter, just enough to cover about a cup or two crushed cornflakes. then sprinkle on top and bake for about 45 minutes on 350 alterations. i always add half a bag of frozen peas. its a good way to hide greens. they really dont change the flavor. and i also add extra cheese on top. i have skipped the cornflakes too when im out. i have also added hamburger. i season and brown about 1-2lbs and add it. if you do this, then do the whole bag of peas and an extra can of soup. what i want to try is adding ham. it is sooooo yummy. and great for potlucks. let me know how you like it.

I make this exact same recipe for family get-togethers, church potlucks, etc. except I crunch up potato chips on top instead of Corn Flacks. When you do chips instead of Corn Flacks you do not add any extra butter to the top, just crunch up the chips and add them after you take the potatoes out of the oven. It is very delicious.

Can you use real potatoes instead of hashbrowns? I have the shredder disc on the food processor I can run them through.

i used to take this to work ... awesome tasting. adding ham makes it super yummy and full of protein!!

Thank you! I will have to try it myself this weekend. I have made something similar but didn't have the crushed corn flakes on top. I like to saute the onions before adding them. I do like to add ham also. It looks like it would be a good Sat morning brunch casserole.

If you do fresh potatoes, you may want to squeeze out some of the excess water. It'd be to wet, but otherwise, you can use them.

This is a family favorite around here too. We take it everywhere when we have to bring a dish. It is always requested at holidays too. I've handed out the recipe sooo many times. Super easy too!!!

Thank you! I've steered clear of recipes similar to this because all I've seen are ones that use can cheese soup (which I can't stand!
). I'll have to give this one a try. |
