Thumbs up 12/11 Crock Pot Recipe....Creamy 3 Potato and Rosemary Soup

Creamy 3 Potato and Rosemary Soup

2 tablespoons olive oil
1 yellow onion, chopped
1 medium sweet potato, peeled and chopped
1 medium russet baking potato, peeled and chopped
2 medium Yukon Gold potatoes, peeled and chopped
4 cups vegetable stock
2 cups water
1/4 cup margarine
1/2 teaspoon salt
2 teaspoons fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
6 sprigs fresh rosemary for garnish


Set crock pot to high heat setting. Stir in olive oil and onion. Let this cook about 10 minutes, while peeling and chopping the potatoes. Add potatoes, stock, water, margarine, salt and rosemary. Reduce heat to lowest heat setting. Cover and let cook for 6 to 8 hours. Puree soup in crock pot with an immersion blender or a hand mixer. Ladle into 6 bowls and garnish each serving with a sprig of fresh rosemary.



Beef and Potatoes, Island Style

3 tablespoons Caribbean jerk marinade
2 pounds round steak
4 potatoes, cut into chunks
1/4 cup flour
1 (8-ounce) jar mango chutney
1-1/2 cups beef broth
1/2 teaspoon salt
1/8 teaspoon pepper
Preparation:
Trim excess fat from round steak and cut into 2" pieces. Combine marinade and beef in a large glass dish and stir to coat. Let stand for 15-30 minutes.
Place potatoes in crockpot. Add flour to marinade/beef mixture, mix to coat, and place on top of potatoes. Add chutney and broth. Cover and cook on low for 8-9 hours until beef and potatoes are tender. 4 servings








5 Ingredient Wild Rice Stuffed Turkey Breast

Prep Time: 15 minutes
Cook Time: 9 hours
Ingredients:
1-1/2 cups wild rice
1 onion, finely chopped
1/2 cup dried cranberries
2 apples, chopped
3 cups water (or, for a six ingredient recipe, chicken broth)
1 teaspoon dried thyme leaves
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon poultry seasonsing
4-5 lb.boneless whole turkey breast, thawed if frozen
Preparation:
You can peel the apples or leave them unpeeled, as you wish. Chop apples coarsely and mix with rice, onion, dried cranberries, thyme, salt, pepper, and poultry seasoning; place in bottom of 4-5 quart crockpot. Pour water over, making sure all wild rice is covered with water. If turkey breast is frozen, thaw it. Place turkey on top of rice mixture.
Cover crockpot and cook on low for 8-9 hours until turkey is thoroughly cooked and reaches 170 degrees on a meat thermometer, and wild rice is tender and popped. 10 servings

Bacon Ranch Chicken

2 Tbsp of real bacon bit
1 tsp garlic minced
1 package of Hidden Valley Ranch salad dressing mix
can of cream of chicken soup
1 cup sour cream
4 boneless skinless chicken breast
Egg Noodles, prepared

Combine the first 5 ingredients.

Pour over chicken in slow cooker.

Cook 3-4 hours on high or until chicken is cooked through.

Serve over hot noddles.

Makes 4-6 servings.

Oh, I'm in! I got a crockpot on freecycle and have never had one so I need some recipes! I'm going to make this tomorrow! I have a roast in it today - the one thing I have made in it.

Thanks! In our house, my husband works Sunday in the day but not the night and I always do "Crock pot Sunday." Yesterday was a soy ginger pork loin and I served it with rice
