I used to live in LV and will be heading back there in a couple of years (fam obligations). Haha I guess I'm a fan too ... but of the outskirts, we used to love going to the mines and exploring the desert ... the city, it's a love/hate thing, I love it because it's so, ummmm, interesting (the city's personality, the inhabitants and visitors!) and hate it because of the same.

the only veggies my picky 1 yr old will eat right now are those spinach nuggets that someone posted the recipe to on this board. took about 10 times of putting them in front of him, but now he eats them!

It sounds wierd, but I grate up carrots to add to my (whole wheat) pancake mix. You can't taste them at all. Oh, and I use a tbs. of peanut butter instead of the tbs. of oil.

I like putting broccoli in my spaghetti as well. Even I eat it like that.

Hmm.. I remeber there being someone on here that made pudding pops and put veggies in them or grew up on veggie pudding pops or something like that. I could see maybe mixing in maybe corn or peas but green beans and chocolate would be icky. Sorry, not really a family meal idea but made me think of that.
Glad to have a teething 13.5 month old. I put a bowl of frozen veggies infront of her and she "goes to town" eating them.

Thanks for this idea, I tossed a few chunks of carrot into the ultimate chopper and then into the mix and it was a success! I think it made them a bit sweeter, DS at them plain

Looking forward to trying some of the other things as well, especially the spinach nuggets!

my kids are usually good veggie eaters, but here's some ideas.

If you make a casserole/skillet supper you can shred up just about any veggie and put it in. I put shredded zucchini in just about anything. You can't really taste it or tell that it's in there because it cooks down, but the vitamins are still there. You could try carrots, just about anything.

Also, I make lots of flavored pancakes. Pumpkin, applesauce, banana (I know those aren't veggies, but you could look for recipes....it's an idea)

You could also try making animals or special designs out of raw veggies (putting several veggies together to look like something). Google it and see what ideas you can find. I haven't tried it yet because I haven't needed to, but I think they look cute when I see ideas.

I told my daughter broccoli was dinosaur food... now she REQUESTS trees and of course pretends to be dino during dinner.

I have started cooking all of my dishes that require ground beef with morning star crumbles. I season them for sausge in lasagne, beef in chili, and on and on. I also do mashed squash in place of potatoes, I do a lot of quiche, they seem to not notice them in there. WE do morningstar sausage patties in breakfast sandwiches, morning star also makes mini corndogs. They make a chicken substitute, but I haven't tried it yet. The bacon is yucky.
