Why not take the kids to a store and have them pick out a vegetable they haven't tried (perhaps just one they like the color or shape of), and then have them help prepare the meal? That might make them more inclined to eat the fruit of their labor, so to speak.

I've heard of doing savory pancakes for dinner (with zuccini, carrots, spinich, etc.), and I know someone else who uses a can of smashed black beans instead of eggs in brownies. She says they turn out great, but I haven't had a chance to try them yet.

I put baby spinach and carrots in my fruit smoothies. You can't taste the veggies but the smoothies are SOO good!
