Bread Machine Troubles!

I was so excited when I was given a bread machine for Christmas and couldn't wait to get started. But I've made 2 different loaves and neither have turned out! I know you have to measure really accurate and put the ingredients in the machine in the specified order...but it shouldn't be rocket science! My first loaf (a banana bread) had really dark crust despite being set for light. And my second loaf (a white bread) tastes fine but the middle was collapsed and hollow. What am I doing wrong? Will it get better?

I've had a lot of really bad recipes that I've used for the bread machine, so it could be that. I'm trying a new one today:

My alterations: 2 tsp bread machine yeast, 1.25 tsp salt, replaced 1 cup of bread flour with whole wheat flour, used olive oil for my veg oil.

As for collapsing, that could be due to not enough salt. Betty Crocker's Best Bread Machine Cookbook has some great tips in the beginning, including pics to figure out the cause of your issues. According to it, collapsing bread could be due to: ingredients being inproportionate, salt, dough rose too fast, high humidity, machine was opened during a baking or rising cycle.

I agree, see if your local library has the betty crocker book, or pick it up. I was ready to toss my machine before I tried it. Very helpful lots of great recipies. Does your machine have a setting to contol the darkness of the crust? Mine has settings for light medium and dark, i would just choose a lighter setting.

Most likely too much water in your dough.
