Recipes for pancakes?

We love pancakes here so I am going through mix like nobody's business. Does anyone have any recipes from scratch? My only requirement that it uses a little whole wheat and flax seed. We have been using Bob's Red Mill, the high fiber one and it's getting expensive. It's like $5 for a small package. Ideas?

I use the Sneaky Chef pancake recipe (check out her book at the library) which is probably similar to many pancake recipes but the flour portion is 1/3 unbleached AP flour, 1/3 WW flour, and 1/3 wheat germ. Maybe you could sub the wheat germ for flax seed?

Here's what I usually use for pancakes. The wheat variation is at the bottom. I'm guessing you could just add flax seed? I've never used it. I do add oatmeal to our regular pancakes sometimes.

Buttermilk Pancakes

1C all-purpose flour
1tbsp sugar
1tsp baking powder
tsp baking soda
tsp salt
1 beaten egg
1 C buttermilk or sour milk
2 tbsp cooking oil

1 Combine the flour, sugar, baking powder, baking soda, and salt. Make a well in the center of flour mixture; set aside. Combine the egg, buttermilk, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Add additional buttermilk to
thin batter, if necessary.

2 For standard size pancakes, pour or spread about C batter into a 3-inch circle onto a hot lightly greased griddle or heavy skillet. For dollar-size pancakes, pour or spread about 1tbsp batter into a 1-inch circle onto a hot, lightly greased griddle or skillet. Cook over medium heat about 2 minutes on each side or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm.

VARIATIONS
Whole Wheat Buttermilk Pancakes:
Prepare as directed except substitute whole wheat flour for all-purpose flour and brown sugar for sugar.

Regular Pancakes: Prepare as directed, except substitute milk for buttermilk, increase baking powder to 2tsp, and omit baking soda.

I found this on the South Beach Diet recipe site, but haven't tried it myself. The bold is my addition.

1 1/4 cup whole wheat flour
3 T flaxmeal
1 T Wheat Germ
1/4 cup Splenda (we don't use Spledna, just use sugar)
1/2 tsp salt
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
t ground nutmeg
1 t cinnamon
1/2 cup water
2/3 cup skim milk (I would use whatever milk you have)
3 large eggs, beaten
2 T Unsweetened Applesauce
1 t vanilla

Mix all dry ingredients then add wet ingredients. DO NOT OVERMIX. Batter will be lumpy. (Over mixing the batter will result in tough pancakes.) Let stand 5 minutes to thicken. Cook over medium heat. Makes 10-12 pancakes.

We use a similar recipe as the buttermilk (but we don't use buttermilk)pancake one, but we use brown sugar. We have tried it with regular and with brown and we all like it better with brown.
