Smile anyone have some good leftover ham recipes?

I have some country ham diced up from my brothers house in my freezer. I wanted to make some sort of ham and potato soup. Any ideas/recipes for that? Or what else could i make with it? thanks!

I would use any potato or pea soup recipe that you like already and toss in the ham. Or freeze some and use it for omelets or quiche. Or ham and cheese scones.

I like making white bean soup or any other kind of bean soup with leftover ham!

I love using leftover ham for this breakfast casserole:

hasbrown patties (usually one package; however many will fit in the bottom of your casserole dish)
8 eggs (scrambled)
diced ham
cheese of choice (I like pepper jack)
optional diced onion, green pepper, chiles, or whatever you want!

Spray the bottom of your pan. Lay the patties in flat. Top with salt and pepper to taste. Mix your eggs, veggies, and ham together - pour over the top. Bake at 350 for 40 minutes or so (until the eggs are set). Top with cheese and bake again just until melted.

Yummy!

what a great idea - i wonder if i were to do them in individual dishes for personal portions for Breakfast, if it would freeze/re-heat well? I am always looking for something new for my hubby to eat quickly in the morning

You could make a cheese sauce as your soup base and add the potatoes ham and whatever else you'd like.

That is a great idea! I wonder if you should freeze them uncooked, then bake? Or do you think cook, then cut up and freeze individually?

Mmmmm...that casserole does sound good. I'm putting it on my 2 week menu plan. Thanks for sharing.
