Re: deer meat..

The secret to cooking any wild meat is cooking it low and slow. Alot of the time if the meat has come from an older animal is can taste quite gamey. One of my tricks is too hide it in things like chili, spag pie, meatballs and tomato sauce. Another thing you can do with other cuts is to marinade it to cut down on the taste.

Re: deer meat..

You can do anything with it you would do with grnd beef except if you want to make the best burgers EVER mix it with ground fat from the grocery store if you can find it or really fatty ground beef/plain ground pork. Mix it to an 80/20 for burgers.

Plain ground deer rocks 'cause it has virtually no fat to drain off. It's a staple around here.

I've only noticed deer being gamy when it's not handled properly. Any meat would taste "gamy" if it were hauled around in a pickup truck all day (-;

Re: deer meat..

okay, I can't stand the smell of deer meat when I'm cooking it...anybody bothered by it or is it just me? Totally ruins a healthy meat for me...but maybe if I try cooking it with beef that will help? We have it in our freezer and I just dread using it...

Re: deer meat..

We use it in everything here...meatloaf (usually mixed with beef half and half), chili, meatballs, spaghetti, hamburger helper , lasagna, burgers (half beef/ half vension), you could make tiny meatballs and use it in Italian Wedding soup or hamburger soup (bf's suggestion...I've never had hamburger soup but his G'ma made it for him often..)

Re: deer meat..

I mix my deer meat w/our organic ground beef and make awesome meatballs...for sandwiches, swedish meatballs etc! I make about 6# at a time and freeze so we have enough for 3 meals for my large family!
