Dinner options for 2 cans of Tuna

I am cleaning out the pantry/freezer etc, as we are soon to go away for 3 weeks of holidays, and i really don't want to stock up on lots of groceries right now.

Give me your suggestions for a dinner using 2 cans of water packed tuna.

We only use tuna for tuna noodle casserole. But on occasion I will mix a can with EVOO, a splash of apple cider vinegar, tomatoes and onions. And corn on the cob! Yummy! But DH is not a fan (guess it was just me growing up with a Greek 'grandfather' (ie:Grandma's live in, but never married, boyfriend).

Tuna sandwiches? Like a tuna melt?

Tuna casserole and hot tuna sandwhiches in our sandwhich maker are about all we ever make with tuna.

I like Rachel Ray's revamped tuna casserole. She uses spaghetti noodles but I've also made it with quinoa. She also calls for Italian style tuna but I just water packed.

my DH's fave tuna cassarole:
-boil whole wheat noodles (something small like macaroni or fusilli...)
-just before noodles are done add whatever canned or frozen veggies you have on hand (i like mixed corn, peas, beans, carrots)
-drain
-return quickly to pot
-add a can of cream of mushroom soup and drained tuna
voila!

i like it best with some cut up fresh broccoli added to the boiling water with the other frozen veggies. its also good cold for lunch the next day!

The dish we usually make with tuna is a cold pasta salad type dish. I don't have the exact recipe, but it's basically:

- pasta noodles (we use the curly ones, I think it's Rotini?), boiled, drained, and then cooled (I rinse them down with cold water to speed things along)
- any chopped raw veggies your fam likes (we use tomatoes, cucumber, onions, alfalfa sprouts, occasionally celery or carrots)
- canned tuna
- Italian dressing (my family is pretty picky about our Italian dressing...I think this dish only tastes right with the Bernsteins brand Italian, or Newman's Own makes a very similar 'family recipe Italian' that works great too)

Toss all the ingredients together with some Parmesan cheese in a large bowl, and there ya go...quick, easy meal

For something really easy, we add tuna to mac and cheese and then add some peas as well. Not fancy, but fast and tasty!

We make our like this, but then add some shredded cheese on top and put in oven for a few minutes to heat though and melt cheese.
