Question EASY Egg Recipes! HELP!

HELP! I need EASY egg recipes....that you dont need much to make...

I already know of various egg things like:
french toast, scrambled, sunny-side up, etc eggs
Salmon Patties, Tuna Patties.

I NEED dinner ideas so I can USE our OVER abundance of EGGS.

Hmmm...here's 2 that I can think of off the top of my head:

1) Tomato & Egg scramble (this actually taste great over rice).

* Diced green onion
* Couple cut up tomatoes - coursely chopped, large chunks are fine
* 5-6 eggs
* White Pepper (preferably) but black pepper will work
* Salt

Basically you stir fry the cut up tomatoes & a little oil and water to get them really soft & tender, scramble in the eggs & green onion. Season to taste.

2) Spinach & Egg Un-Quiche (there is no crust)

* Bag of prewashed baby spinach
* 4 - 5 eggs
* Can of Cream of Mushroom soup
* Couple TBLS of milk
* Salt/Pepper

Heat the Cream of Mushroom soup until it's warm, stirring in a TBLS or 2 of milk to thin it just a bit so it's not chunky. Pour it over the baby spinach to wilt it & then toss to coat the leaves until everything is sauced. Scramble up the eggs & then add them to the spinach mixture. Add a little salt/pepper for seasoning. Pour the entire mixture into a large, greased quiche/pie dish & bake at 400 for about 45 min (I'm kinda guessing here from memory) It will be done when a toothpick comes out clean. Tastes like a Spinach Quiche w/out the crust.

Oh...another one, Chili Omelette w/cheese & onions, great on cold wintery nights for dinner.

How about a quiche dish? I have a recipe for a broccoli, cheese and bacon one if you want me to dig it out. I made it for a covered dish and it went fast!

I like to make a Spanish Tortilla (like a frittata) -- learned this from an old Spanish grandmother! Thinly slice some potatoes (about a cup?) and some onions (1 large or 2 small). Saute them in plenty of olive oil until the potatoes are cooked. Meanwhile, beat 10-12 eggs and add salt and pepper. Using a large spoon, scoop the potato/onion mixture into the bowl with the eggs and mix. Add lots more olive oil to the pan and pour egg/potato/onion mixture into the pan. Oh yeah, I forgot to say that you should do it in an oven-safe skillet. Cook over med. heat until the bottom is lightly browned, then put in the oven and broil until the top is done. Serve as wedges with french bread. In Spain they also eat it as a sandwich the next day, in between 2 slices of bread.

Egg sandwhich, just bread mayo and eggs...I used to love it before I developed an egg allergy and can't eat them anymore. Or what about pork fried rice? That uses eggs

Cheesy Chili Relleno Casserole

3 (4oz) cans Whole Green Chili Peppers
1 cup milk
4 egg whites
1/3 cup all purpose flour
2 cups shredded Monterey Jack Cheese
2 cups shredded Sharp Cheddar Cheese
8 oz. can tomato sauce

Preheat oven to 350 degrees.

Lightly spray a 1 1/2 qt casserole dish w/ nonstick cooking spray.

Slit the chili peppers in half lengthwise. Remove and discard the seeds. Rinse and drain the peppers.

In medium bowl, beat together the milk, egg whites, and flour until smooth, set aside.

In another bowl, combine both cheeses. Set 1/2 cup of the cheese mixture aside for the topping.

To assemble the casserole: Layer half each of the chili peppers, the cheese mixture and egg mixture. Repeat the layers with the remaining chili peppers, cheese mixture, and egg mixture.

Pour the tomato sauce over the top, then bake for 30 minutes.

Sprinkle with the reserved 1/2 cup cheese mixture and bake about 20 minutes more.

Bacon Egg Casserole:

10 eggs
2 cups milk (or cream if you want it realllllly rich)
8 slices of bacon, fried and crumbled or 1 lb sausage crumbled/cooked
8 slices of bread crusts removed(day old bread is great!)
1 tsp dry mustard (you could probaby use regular mustard, I've never tried it though)
1 tsp salt
Pepper to taste
2 cups cheddar cheese, divided
1/4 cup parmesan cheese
3/4 cup crumbled potato chips

Preheat Oven to 350 degrees. Fry bacon or sausage. Mix Eggs, milk, salt, pepper and 1 cup of the cheddar cheese. Place bread in the bottom of a lightly greased 9 x 13 pan. Pour egg mixture over bread. Sprinkle the bacon or sausage over the eggs/bread. Sprinkle remainder of cheddar cheese over the bacon. Sprinkle potato chips over top of cheese and then top with the 1/4 cup parmesan.

Bake for 40-50 minutes, or until cheese is bubbly and golden brown.

You can put this in the fridge and let it set overnight, then cook in the morning, but it is not necessary. I like to top this with green onions, chopped, if I have any, and you can omit the chips and cook with lite sausage or turkey bacon to cut down on the fat content.

I used to make quiches for dinner....it would work becuase you can change it up depending on what you have on hand.

We also used to make them up ahead of time, uncooked (cheese, eggs, etc) in a freezer bag and freeze them....just pull them out, thaw and pop in the oven for a quick dinner

WOW, thanks! keep them coming! This is great! I can start using all the eggs I get from wic!

quiche------ yep...never made one of these BUT I like them and want to learn how... so these recipes are VERY welcomed too....

I have bread now, I will hve to do egg sandwiches tonight...
