Sweet Potato ~ Ideas Needed

I have 5 whole sweet potatoes that need to be eaten.
I normally just bake them and mash with butter, cinnamon and sugar but want to try something different.
I don't want anything with marshmallows either. HA

i second fries! they make reeaally yummy fries (but hold the ketchup!lol)

French Fries (baked), Peel, steam, than puree with some water (from steaming) to make mashed sweet potatos, cube and add to a stry fry, ohh and if you mash them try adding some curry powder for an extra kick!

We're having sweet potato burritos this week- Season a can of black beans with garlic, onion, chili powder, cumin, prepared mustard, cocoa powder, cinnamon, and cayenne pepper. Layer the mixture in a flour tortilla with mashed sweet potatoes and cheddar cheese. Bake it. Never made them before so this isn't much of a recipe, but it sounds good, so I'll give it a try.

Thanks for all the ideas everyone. I think I'm going to try fries today and then pancakes tomorrow if I get the recipe today.

I like to make sweet potato biscuits, too! ODS hates sweet potatoes, but just about begs for the biscuits! Go figure....
