making my own "rice o roni"

I've been trying to make everything from scratch since I know its healthier and cheaper, but I can't figure out any side dishes. We are a rice a roni, noodle roni, lipton side dish family Does anyone have any recipes or a website that shows how I can replicate these?

Here's what I do, and it tastes just like the chicken rice-a-roni, but it doesn't look like it

In a medium saucepan, combine:
1c. uncooked white rice
2.c water
1 tbsp olive oil (not virgin or extra virgin; can substitute vegetable or canola oil)
2 tbsp chicken bullion powder

Cover and bring just to a boil, reduce to simmer and let it cook for 12 minutes. Then let it sit for anywhere from 5-30 minutes (it will be ready in 5, and still hot at 30)... don't take the lid off at any time!! Once the lid goes on, don't touch it! When you're ready, remove the lid and fluff with a fork

BTW, I usually wrap a kitchen towel around the lid before putting it on to prevent steam from escaping, as the steam is what continues to cook the rice.

Hillbilly housewife has easy recipes for make a home rice "mixes." I love them.
