ideas for chicken sausage?

Okay, I bought some chicken sausage and want to eat it. What should I do with it? I got roasted garlic and herb and a sundried tomato and basil. They are in four packs. I need an idea for them. If it was nicer outside and my grill was hookedup i would just grill and put in a hot dog roll. What can i use it for? Let's hear some good ideas!
I can't have dairy but, the rest of the fam can. Just for a heads up.

I haven't tried this but it sounds good.

Chicken Sausage Stir-Fry

2 tsp canola oil
3 chicken sausage links, sliced
1 garlic clove, crushed
1 large onion, chopped
1 large green pepper, chopped
2 large carrots, julienned
3 tbsp reduced sodium tamari or soy sauce

Heat oil on medium heat in a large skillet or wok. Cook sausage slices until browned, about 2 minutes. Add onion, green pepper and carrots and stir fry for 3-4 minutes. Add tamari or soy sauce and cook for 2 minutes longer.
Serve over whole grain rice.
Serves 4.

I take them out of the skin and use them in my spagetti sauce

Okay, I made a stir fry and it was fab! red and green bell pepper, green beans, tons of roasted garlic, carrots and onion with the sausage. It was so good! Thanks momma!

I love chicken sausage! I usually saute some garlic, onion and red pepper in butter and a little EVO until I can smell the garlic. I take them off the heat then and cook the sausage in a skillet. When it is almost done I add the garlic and other ingredients back into the skillet with the sausage and cook them for a few more minutes. I put the whole mixture over angel hair pasta, YUM!

Oh Chicken sausage stir-fry sounds yummy. I make stir-fry all the time, but never thought to do it with sausage, let alone chicken sausage. Great idea!!

We *love* chicken sausage, peppers and penne pasta...oh yum! Just take the sausages out of the casings, slice them up, cut red and yellow peppers into strips, and cook them all together. Cook some penne pasta, toss together, and you've got a great dinner!
