Easy, cheap roast chicken??

I figure if I can handle a turkey and a roast then chicken shouldn't be a problem right?? So what are your easy recipes? I don't want to buy a bunch of stuff for it that I won't use again.

This is my absolute favorite way to do a roasting chicken. The recipe is for the crock pot, but if you don't have one you can do it in the oven @ 250 degrees for 5 hours.
It's sooo good and tender, but ridiculously easy.

Thank you! I have a crock pot so I'll definitely give that a try, I think I have most of those things on hand.

If you don't have all the spices I would still try it- I've omitted the Cayenne (because we don't do heat) & white pepper (because I keep forgetting to buy it) each time I've made it and it's still yummy

Whole chicken
rice (not instant but as much/little as you want)
chicken stock
veggies - carrots, onion, whatever

Put the chicken in a 13x9 pan. Add rice and chicken stock (1 c rice to 2.25 c stock) with veggies. Bake until chicken is done - I can't remember the temp poultry needs to be at but you get the idea. Oven at 350.

Leftovers are great for chicken pot pie or chicken and noodles.

I brine my chickens overnight (1/2 cup salt and 1/2 cup honey or something like that) in the fridge. I then dump out the brine, rinse the chicken and put it in the crock pot with some salt, pepper and thyme. I set it on low and let it cook 6-8 hours. It falls apart and makes incredibly yummy chicken.

What does brine mean? Is it like marinating?

I add s/p to it, put in in a roasting pan or pyrex dish, add carrots and chicken stock or water and boullin cubes and put it in the oven according to the directions on the pkg, I bast it whenever I remember (atleast every 1/2 hr to 1hr) and when the popper pops its done, it's so moist everything falls off the bone when you touch it. Yum-o

More or less. The brine helps the meat be more tender and adds a little flavor (courtesy of the salt and sweetener) but not as much as a marinade would. When you buy a turkey at Thanksgiving, they are often already brined prior to being frozen.
