Need a quick potato salad recipe

... something really quick and easy to prepare, b/c DH doesn't like potato salad, so it will just be a side dish for me [and maybe the boys]. I have some left over potatoes here and want to use them up.

Or, other ideas on quick fixes for left over potatoes.

Ok, I don't have amounts, so these are guesses, but this is how I make it all the time.

Take your taters and dice them up into squares. Boil some eggs, I use a dozen for about 8 to 10 lbs of potatoes. Dice some onions, just to taste. Then I mix mayo, mustard and relish together. I totally just eyeball that and sometime I add a little sugar if the relish isn't sweet enough. Maybe equal parts of mayo and mustard?

This is my all time fav potato salad recipe, I copied it from the " Annies Naturals" web site:

Blissful Goddess Potato Salad

2 lb. Red Bliss, Yukon Gold, or similar firm potatoes
2 cups celery, finely diced
1 cup carrots, julienne cut
1 bunch scallions, including greens, trimmed and sliced thin
Annie's Naturals Goddess Dressing or Organic Goddess Dressing
Optional: 1 cup (or small pkg.) fresh sunflower sprouts, or watercress

1. Clean potatoes and put in salted cold water; bring to a boil, then lower heat
and cook until just tender (10-15 min. or so, depending on size).
2. Drain under cold water to stop further cooking, and put potatoes in bowl to cool.
3. Cut potatoes into 1” cubes, leaving skins on.
4. Combine potatoes with celery, carrots, and scallions, and mix together with Goddess Dressing.
5. Optional: garnish with sunflower sprouts or watercress.
