Question What to do with Rotisserie Chicken?

My well meaning husband bought 3 og these yesterday at Sams club. I deboned all of them and now I have a TON of cooked chicken. I'll freeze some of course.

Looking for suggestions as to what to do with 3-4 pounds of cooked chicken...I'm feeling overwhelmed and unimaginitive. Oh yeah, and pregnant too.

Chicken Salad, Chicken Ceasar Salad, Chiken gumbo, chicken noodle soup... I feel like Forrest Gump and his shrimp...

I like making chicken quesadillas. just heat up a skillet, lay a tortilla down and add chicken, cheese, fixings and another tortilla. Heat for a few minutes, flip and you're done!

Quick and easy!

I found a book at the library called: Rotisserie Chickens to the Rescue! Carla Fitzgerald Williams
I found a few recipes that we would use. I end up buying my chicken from Sams club but that was when I was going almost every two weeks. Now we go every month to 6 weeks. It's too expensive to buy the chicken at the grocery store.

I would freeze it! It's always nice to have cooked food to reheat when you don't feel like cooking.

I love putting chopped up chicken in cooked brown rice, add a can of corn and some bbq sauce all mixed up. If I have them then chopped peppers is nice in it too!

Here's one of my faves:

King Ranch Chicken Casserole
1 lg. pkg. corn tortillas
1 c. cheese, grated
1 can cream of chicken soup
1 c. chicken broth
1 sm. onion, chopped
1 can cream of mushroom soup
1 can Ro-tel tomatoes
1 chicken, deboned (about 2-3 cups)

Make 2 layers of tortillas, chicken, onions and cheese, and a third layer of tortillas. Mix together the wet ingredients and pour over the casserole and then top with more cheese. Bake at 350 degrees for 45 minutes to 1 hour.

I sometimes add corn and black beans to this to make it a bit more substantial, but you could probably add things like spinach, mushrooms, peppers, etc.

It's very yummy with a salad and a tall glass of iced tea.

chicken soup---use those bones
chix salad sandwiches--we like to mix with sour cream, salt, onion, dillweed and whatever else you like--celery, grapes, walnuts, apples, raisins, etc
could put on bagels with sprouts
or chicken plain on bagels with sprouts, avocado and cream cheese. yum!!!!
