Skillet/one pot meal recipes anyone?

I like one pot meals or skillet meals, especially in the summer, because you don't have to heat up the oven but you can still get something warm. If anybody has anything they would like to share I would love it. Thanks!

This is technically one pot and one skillet, but I think it counts.

Chicken Orzo Skillet

1 cup uncooked orzo pasta
1 lb boneless skinless chicken breasts, cubed
3 tsp olive oil, divided
3 garlic cloves, minced
1 can (15 oz) white kidney or cannellini beans, rinsed and drained
1-1/2 tsp Italian seasoning
1/2 tsp salt
1 package (16 oz) frozen broccoli florets, thawed

1. Cook orzo according to the package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook chicken in 2 tsp oil for 6-7 minutes or until no longer pink. Remove and keep warm.

2. In the same skillet (see, it counts ), cook garlic in remaining oil until tender. Stir in the tomatoes, beans, Italian seasoning and salt. Bring to a boil. Stir in broccoli and chicken; heat through. Drain orzo; stir into chicken mixture.


I really loved this dish. Though my orzo was done way too soon, so I think I will wait until the chicken is close to done next time. And, I think I will use chopped frozen broccoli instead of the florets.

I can't wait to see other contributions! I love new recipes!

I LOVE the Kitchen Threads. I am a FOODIE at heart that wishes she had the Funds to back up her OBSESSION!!!
I have many One skillet pot recipes that I would Love to share. as soon as I have time to Type them up since I recently Lost my information when my hard drive CRASHED
one of our Favorites is

Smothered Pork chops

6 Boneless Pork steaks/chops
1 Can Cream of Mushroom Soup
1 Small onion in THIN Slices
1Clove Garlic minced
1quart Button Mushrooms (could used canned if wanted)
1 quart Chicken stock
2 Tblspn Brown Gravy mix
1 Can milk (same can as soup)
Salt and pepper (I like jhonnys garlic salt)
2 Tblspn oil (enough to coat bottom of deep skillet)

1. salt and pepper your chops
2. Then Shallow Fry them until they are Nicely Browned (they will not be fully cooked)
3.Remove chops to plate
4. Add Thinly sliced Onions garlic and mushrooms to pan and cook for aprox 5 Mins to get a Nice brown color on them. then add gravy mix, stir to coat veggies.
5.Add can of soup, Can of Milk, Stock and Mix until combined then Put your chops back in the gravy mixture.
6.Cover and cook for about 30-45 Minutes (depending on the thickness of your meat)

**brown meat on Med-High for about 3 Mins on each side**
*Slow cook meat in second cook on Med-LOW for the 30-45 mins Covered*

We serve this with Egg Noodles, White Rice, or Orzo pasta.
Add a Veggie of choice and your DONE.

(I guess its not really one pot if you have to make stuff on the side huh)

Yummy! My DH loves pork and mushrooms so this should go over well.

Well, sides are sides, so this does qualify for one pot.
