Tonight for supper I made Kabiasi and sauer kraut. (sp). I just cut up the meat, dump in a baking dish, dump sauer kraut on top and put a lid on. Bake for a couple hours at 350. I would never have thought to make this until I met my polish DH. Now I have my whole family making it. lol For special dinners we add pork chops as well.

This one is SO good you will want to make it a couple times a month. I buy the fresh ball of mozzarella and break off chunks of it and put it on top to melt right before I serve it. MMMMM...I need to make this!

Skillet Parmesan Chicken
INGREDIENTS:
4 boneless skinless chicken breast halves
1/2 c. flour
1/2 c. Italian seasoned breadcrumbs(I use panko)
1/4 c. parmesan cheese
1 egg
1/2 c. milk
1 tbsp. butter
2 tbsp. olive oil
4 oz. sliced mozzarella cheese (if you can get the fresh mozzarella ball it's so good and creamy)
your favorite marinara/spaghetti sauce store bought or homemade.

1.) Dredge chicken in flour and shake off excess.
2.) Dip in egg/milk mixture, then in breadcrumb/parmesan mixture.
3.) Heat butter and olive oil in large skillet.
4.) Brown chicken breasts over medium heat until golden on each side (about 2-3 min per side).
5.) Remove to plate and keep warm.
6.) Add the marinara/spaghetti sauce to skillet.
7.) Heat to boiling and simmer 10 minutes.
8.) Add the chicken breasts to the sauce. Place a piece of mozzarella on each piece of chicken.
9.) Cover and simmer about 8-10 minutes or until cheese has melted.
10.) Serve with your favorite pasta and a salad!

Re: Skillet/one pot meal recipes anyone?

Here's a recipe from Kraft that I make at least once a week (yay for picky eaters!) At least I know there is something my picky daughter will eat!

It's really easy and adaptable to your family's taste. I actually add in a couple of cloves of garlic and use my favorite pasta sauce. I cut everything up into bite-sized pieces because my kids will actually eat it then. I also use more noodles and less cheese than the recipe calls for (it's a lot of cheese!)

Also, technically it's 2 pots as you boil water in one for the noodles and cook in another pan.

Italian Chicken Pasta Skillet

Prep Time: 10 min Total Time: 22 min Makes: 6 servings

What You Need - 1 lb. boneless skinless chicken breasts, cut into bite-sized pieces
1 green pepper, chopped
1 small onion, cut into thin wedges
1 jar (26 oz.) spaghetti sauce (about 3 cups)
2 cups (6 oz.) mostaccioli, cooked, drained
1 pkg. (8 oz.) KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided

COOK chicken in large skillet sprayed with cooking spray 5 min. Add green pepper and onion; cook 5 min. or until chicken is cooked through and vegetables are tender.

ADD spaghetti sauce and mostaccioli; cook until heated through.

STIR in 1 cup of the cheese. Sprinkle with remaining 1 cup cheese; cover. Let stand 2 min. or until cheese is melted.

Special Extra - For a spicier dish, add 1/4 tsp. hot pepper flakes with the spaghetti sauce.

I am so sorry I wasn't around earlier!!! And, sorry it wasn't in the ingredient list.... It is a can of stewed tomatoes, though I am sure that any can of crushed/diced would work.

Again, sorry!
