Cheese Sauce?

Ok, I have some cauliflower. And I have a block of cheddar cheese. How can I turn this into cauliflower with cheese sauce? Is it just a matter of melting the cheese, or do I need to add something?

For a regular cheese (non velveeta) I would make a white sauce (a little butter melted, add same amount of flour, add milk and simmer till thickened) then I would add in shredded cheese and whisk till smooth and top cooked cauliflower with the sauce.

Just make a simple roux from equal parts fat (butter or olive oil), and flour. Whisk in milk, salt and pepper. Cook until bubbly, then let it cook (while you stir) until desired consistancy. Stir in grated cheese.

Also, if you add a little nutmeg, it'll improve the taste. It's so easy to make!

. . . and if you find that your sauce is a little gritty (as cheddar can be), you can use a mix of colby (more colby than cheddar) and extra sharp cheddar with great flavor and less grit.

Now, off to make a white sauce w/mozzallera and parmesan for dinner.

or for the super lazy version, melt 4-8 oz of cream cheese (dependig on how big your block of cheese is) and add nutmeg, a pinch of salt, and stir in your shredded cheddar cheese.
