Quick and Easy Salmon Cakes
I made these up tonight for dinner, and they turned out a LOT better than I thought they would! The entire meal cost less than $5, and we are getting two meals out of this!
2 cans of salmon (roughly 12 ounces) 1 box of stove top stuffing 1 cup of flour, seasoned how you like (I used salt and pepper) Make the stuffing according to the directions on the box. Open cans of salmon and drain. Mix salmon in with stuffing. Pat salmon stuffing mixture into size of your preference, I used hamburger size. Coat patties with the flour, then drop in oil. I used my deep fryer, you can fry on the stove as well. Cook for about 4 minutes, or until as crispy as you like. For us, this yielded eight cakes. Four of those we did NOT coat in flour, just put in a freezer safe ziplock bag and threw in freezer. Advertisement

Or you can use salmon, flour and an egg and fry them and they taste great!

Yeah, that was what we WERE going to do, but then I thought, "you know, I have this stuffing here, let's try it!"
