What is for Easter?

What are you planning on serving for easter? I have no idea yet, but I have 30 people to feed!

It will be just our little family and I think we are going to have a beef roast.
Not sure what we are gonna have with it yet . I'll figure that out later.

I have no idea what we're doing for Easter, either. We'll probably end up going over to a family member's house as I did Thanksgiving here and that was enough for me! One things for certain, we're going to have a ton of pies. It's a family tradition for Easter and Thanksgiving, we always make a bunch of different kinds of pies. So good!

I want ham.
But we'll have turkey with all the fixins because I have a WHOLE uncooked turkey ~ left over from Thanksgiving ~ in the freezer that needs to be cooked.
I bought a turkey, my mom bought a turkey....we only needed one turkey for Thanksgiving!
So my freezer ate one too! LOL!

But I would love to do ham, greenbeans, potatoes and rolls. yum!

We eat at my in-laws. They usually make a ham and another meat. I'm not sure what I'm taking. I'd like to keep it healthy as MIL is on a restricted diet, but I want the tasty traditional foods too.

I guess I better get thinking. lol I like to make 2 or 3 things to take. Usually a side dish, a dessert and a finger food like deviled eggs. (Gotta use up those easter eggs). lol

I'm just glad we're not going out this year. Last year they insisted on going to the Easter Buffet at Quaker Steak and Lube. It cost a fortune, DH and I can't enjoy it with 2 small kids and I hated eating in a bar to celebrate the resurrection of my Lord!! Small vent, sorry.

We are going out to Olive Garden! 3rd year in a row- it's just me, DH, and his sister and brother in law, so no one wants to cook a big meal! If I WERE cooking, I might do scalloped ham and potatoes in the crock pot. I think I might do that soon- pick ham up when it's on super discount after Easter. So easy and yummy!!

In case you're wondering, all I do is layer slices of potatoes, slices of ham, then salt, pepper, cheese, repeat. At the top 1 can of cream of celery. Cook 8 hours or whatever. YUMMY!!

My birthday occasionally falls on Easter, too. I used to think it was the coolest thing as a kid! The next time it happens is in 2013 for me.

When I think of Easter dinner, I think of:

Deviled Eggs
Salad and Fruit Salad
That green jello salad with the cottage cheese and pecans
Ham
Mashed potatoes
Green bean casserole
Cornbread
Pie, Pie, Pie!

So far my menu is:

Honey Baked Ham
Candied sweet potatoes
Pasta Primavera
Mashed Potatoes (with cauliflower and parsnips)
Green bean casserole
Homemade rolls
Green Salad
Lots of pies

I still want one more side dish - preferably something healthy since my menu isnt exactly good for you, lol.
