WIC items - need ideas, please!

I have some items I received with my WIC credit. I have cans of evaporated milk and several pounds of dry beans. Someone told me to cook the beans with salt pork, but I don't know how. Anyone have ideas for these ingredients? I know I can look at allrecipes.com but I'd rather ask you mamas first since I *trust* your opinions.

What kind of beans are they? I use different beans for different recipes. I have a recipe I love for a black and white bean dip. There are others I like for other types of beans though too.

I am on Wic too and I have tons of beans and tuna! You can use the e. milk in mashed potatoes or creamed spinach. I make the beans as side dishes for my dinner everynight. I usually get the lentils or lima beans and just cook and season them. I also like the chickpeas and make a batch and freeze them. I then add them to salads or purree them into hummus.

I'm not on wic but we use a ton of dried beans
15 bean soup
Chili served over rice, noodles, cornbread or baked potatoes
split pea soup with cooked with ham bone or pork fat
Lentil Soup
Beef soup with lentils
Pasta fagiloi(navy beans, kidney beans and pinto)
Refried beans(make ahead and freeze into portions
Vegetable soup with lentils or any kind of bean really
Lentils as a side dish, with onions
black beans(just cook and freeze into portions) eat as as side dish, put in tacos, etc..
black bean corn salsa
chicken tortilla soup with black beans

I've made these Texas-style pinto beans several times. They're yummy and easy. A good side dish for a Tex Mex meal or as the filling for burritos.

Do you also get cheese as part of your WIC benefits? Because you can make really great stovetop macaroni and cheese with evaporated milk and shredded cheese. Alton Brown calls for sharp cheddar in that recipe but I actually find its better with mild cheddar or half medium cheddar and half American cheese.

this time I bought pinto beans but the other options at my store were: peas (won't eat them here), navy, kidney, black eyed peas , great northern white, and lentils. I like the refried idea and the recipe for the Texas pinto beans.
I found that same recipe for mac & cheese and will try it. Thanks, mamas!!

my family likes pinto beans and cornbread....
Just soak the beans overnight, or for a couple hours in the morning and cook them in water and salt. You can throw in some jalapeno slices or mexican oregano if you want. Cook them several hours and make a batch of cornbread. Put a square of cornbread in a bowl, top with beans (with some of the juice) and shredded cheese. My ds will eat 3 bowls of this if I let him! Cheap and easy!

You can puree the great northern beans and make a dip, or if you make it thick enough, it's almost like mashed potatoes (side dish).

This looks so yummy! It is Slow-Cooker Beef and Black-Bean Chili. I saw it in this month's Everyday Food and am going to make it on Thursday when DH is having surgery so it will be ready when the kiddos and I get home. The best part is you do not even have to soak the beans because it is going in the crock-pot.

Do you have a crockpot? I make White Chili in the crockpot and just recently started using dried beans instead of canned and it comes out wonderful!
