can you freeze cake?

Hi all! Wondering if anyone has successfully frozen cake or cupcakes. My son has food allergies to milk & nuts, so I end up making a lot of his goodies from scratch. Before I possibly ruin an batch of cupcakes in the freezer, I thought I'd ask if anyone has tried this. Thank you!

Re: can you freeze cake?

Many people freeze the top of the wedding cake to eat at the first anniversary..as far as I know cake can be frozen without a problem just the icing/frosting has problems sometimes. Try freezing just one overnight and try it the next day then you will only sacrifice one if it doesn't work.

Re: can you freeze cake?

A friend of mine makes cakes as a side business. She recommends freezing cakes right out of the oven to capture the moisture.

I started doing freezing my cakes and I have to say that the texture and moisture is excellent!

I frost right before serving though.

Yep, just don't frost them first!

My mom always did too. She decorated for all the families b-day's so she'd bake ahead and then freeze the cakes until it was time to frost.

I freeze cakes all the time. But I can't say that I've ever frozen a dairy-free cake for sure.
