baking a pork tenderloin roast??

I was going to make this in my crock pot and then make bbq pork sandwiches, but our crock pot is mia we just moved. I have to make something with it tonight.

Any good ways to bake it??

I always prepare scallop potatoes and throw it in the center when they are baking. Bake until the tenderloin is done (potatoes make cook for a while after they are done) If it looks like the potatoes are getting too dry add a little water at a time to keep them moist. Makes for a really tender pork tenderloin, and its a one dish meal

We are actually making this for dinner right now

My favorite way to cook pork tenderloin is to throw it on a roasting pan with a bunch of cream-of-mushroom soup (although any other "creamy" soup should work.) We add quartered potatoes and baby carrots and VOILA: yummy TENDER roasted pork.

Oh yeah, and you just bake it until the meat is tender enough to fall apart at the touch of a fork.

My favorite way is to marinate it a bit in salt/pepper, olive oil & rosemary and cut slits & stick in pieces of garlic. IMO the best way to cook it (and keep it super tender, cause tenderloin can be dry if you overcook it, but if nice & moist it's my fave!) is like this: http://www.recipezaar.com/Perfect-Pork-Tenderloin-63828

It's an energy saving way to do it also, cause you shut off the oven after several minutes and leave the meat in to cook as the oven cools (DON'T open the oven!!). Yum!

I love the cream of mushroom soup way. I also have a recipe that I haven't tried yet that calls for marinating the pork in cola before baking. The cola really tenderizes the meat. I forget about it because we never keep soda in the house anymore!
