ideas for freezable meals.

So my sister is coming this weekend and talking about "stuffing my freezer" in anticipation of me being put on bedrest. Anyone have any favorite freezables? Of course we'll do a lasagna or 3 (ha, ha) and maybe some soups...

Anything that could make my husband's job easier if I get put on bedrest which I'm thinking is more and more likely.

Gosh, any marinated chicken is easy. Put all the ingredients + chicken in the freezer bag and freeze. The night before you want to eat it, put it in the fridge to defrost and marinate more and then bake at 350F for 30 - 45 minutes (depending on size & thickness) and it's done! has some great OAMC (once a month cooking) recipes - just search on OAMC and you'll find a bunch. We love the Bombay Chicken.

When I make Meatloaf, I bake them in a muffin pan instead of a loaf... they cook in 30 minutes instead of like an hour and a half, and they are great for freezing in single serving portions, or familiy meal portions.

The recipe is..

1 1/2 lbs of meat (I use 85% lean, if you use 90% you may want to spray the tin with cooking oil and cover with foil towards the end of cooking)
1 small onion, chopped
1 cup of bread crumbs (oat meal can be substituted)
1 cup of milk
1 egg
1 tsp sage
1/2 tsp salt
1/2 tsp pepper.

Mix all ingredients well. Top with sauce

1/2 cup of packed brown sugar
1/2 cup of ketschup
1 tsp prepared or dry mustard
2 tsp nutmeg
Mix all together until well blended, spoon on top of meatloaf

Bake in preheated oven at 350 for 30 mins!

Best meat loaf I've ever had. My DH didn't like meatloaf when we first got married... then I made THIS recipe! and he LOVES it!!!
