Make a good organic carrot cake (just a small cupcake will do) and put Organic whipped cream on top with no sugar. She'll probably LOVE it! I agree with you on the sugarload. Looks like a lot of us are on the same page.

I also have a good recipe for applesauce cake with raisins which can be made into cupcakes too. PM me if you're interested.

You could do some sort of organic muffin and use a glaze rather than frosting.

I made zuccini "cupcakes" for my ds 2nd b-day. Everyone loved them! Kids thought they were great - didn't even know there were veggies in them.

I didn't read through all the replies, but there are some vegan cake recipes that absolutly rock!!!

There are also a couple cake recipes that use no processed sugar (just a little natural honey) and just plain whipped cream "frosting" with a tiny bit of plain vanilla. Its really good. That is what my mother makes for the kindergarten children she teaches when they celebrate a birthday in her class.

If you want the recipe, let me know and I can get it for you. Its really tasty!

Wow, this is a REALLY cool thread! I was a single mom at 19 (almost 20) years old and didn't know a thing about being healthy. For my first daughters birthday she had her own cake that was pretty decent sized and was eating sweets and drinking soda. I cringe thinking of it now.

I've been wondering what in the world I'd do for my son. Here's another banana split idea to have a little sweet in it but not too much.

Plain or vanilla yogurt, banana, other fresh fruits such as strawberries or blueberries and then chocolate syrup. Looks really yummy and tastes great! I'll have to try out some of these cake recipes. My family would in no way go for the carrot cake, but I could make ds a little cake for himself (and freeze the rest for me ) and then make something else for everyon else.

The author of "Vegan with a Vengance" also has a great cupcake book. "Vegan Cupcakes Take over the World", or something similar. Both are very good cookbooks. The lemon cupcakes from "Vegan with a Vengance" are a huge hit here.

Muffins (any muffin you would normally eat). Just put them in cute little paper wrappers with a candle on top to make them look more like cupcakes (if you'd like). Carrot cake is a good sub for those store-bought monstrosities. I made DH a whole wheat carrot cake, with fresh carrots (not for his birthday, but he loves carrot cake) - it was a great hit!

Other mamas have mentioned the carrot cake which we did for DD & DS. (Just don't alter the recipe at all because for DS I tried to reduce the recipe and it came out like a brick. ) The following link has several different ideas for birthday cakes:
