oops! soft white wheat (pastry flour) for bread?

DH just accidentally made bread dough using our soft white wheat berries... I know that the pastry flour this makes should generally be used for non-yeast baking... but will my bread still turn out ok or will it be bad or weird?

any thoughts? TIA!

Soft wheat generally doesn't have enough gluten to make bread, I have never done it but I'd guess it may not rise like it should. You might try doing something else with it, like making naan - a fried flatbread that is sooo yummy! I'm sure there's something you can do with it so it doesn't go to waste.

so should i just bake one loaf and make naan with the other? with the loaf be edible? DH did put a little gluten in the dough when he was making it...?

or should i just make naan/flatbread with all of it?

well, turns out the bread rose fine because DH had added some gluten to the flour, so i stuck the loaves in the oven and they are even fluffier than our bronze chief wheat flour! awesome!

I did a loaf of half soft wheat and half white and it turned out way better than my hard red wheat ever does!

hahaha! it seems soft white wheat is the new secret to fluffy soft bread! As long as I add some extra gluten so the bread can rise and not be all fall-aparty

here is my in law's recipe they've been using for about 20 years! works great for us... it's not the most organized layout, so let me know if you have any questions!
