Re: Recipes if you're trying to reduce prepackaged foods

I learned an interesting fact the other day. Southern Ca oranges are some of the sweetest and highly prized in the world but americans dont like them because they have a greenish tint to them so we export our oranges all over the world at top dollar and import the bright orange oranges that are less quality.

I was asking what was wrong with the 2 orange trees in our backyard, they always had a funny color so i didnt think they ever rippened. boy was i wrong! The reason they are shiny is they are coated in a wax to keep bugs and moisture off them durring shipping. same with apples. this was all according to the farmers market guy

If you all are looking for a good source for making your own prepackaged foods the book Make a Mix is awesome. You can make your own pancake mix, spanish rice, and TONS more. They give some mixes to make in bulk and then tons of recipes that can come from that mix.

How would you do cream of celery? Would you do it the same way, just add the celery?

We have recently went away from prepackaged foods and are buying organic as well, it is costing more....but I feel so much better. Thank you for the recipes.

I do all my "cream of" soups from scratch at home, and I just saute' any vegetables in butter before moving on to the soup part. Works fine for me. You might have to experiment with the amount of celery to see what you like.

Re: Recipes if you're trying to reduce prepackaged foods

I have got so many of these recipes! Was a follower (at least in theory) of the FAILSAFE diet. They avoid almost all additives and preservatives, even ones some consider "safe" so I even have a recipe for homemade marshmallows. Here we make our own: chocolate syrup, hot chocolate mix, taco seasoning packets, cream soups as mentioned above, oatmeal spice packets. I also have recipes for evap. milk, sweetened cond. milk, onion soup mix, homemade "Shake & Bake", fish fry seasoning, mayonnaise, ketchup, pancake syrup, the list goes on and on. If there are any specific recipes anyone is interested in, let me know. I'll be glad to dig them out and put them on here.

Re: Recipes if you're trying to reduce prepackaged foods

This thread needs a bump and some more recipes!

We make spaghetti-o's from scratch. Really, not much more than fancy spaghetti, but for those whose kids love spaghetti-o's we do this. I don't like the canned ones, but this is good and makes a lot! Sometimes we reduce the cheese, sometimes we add meatballs, veggie "meat" balls, whatever we feel like! Leftovers reheat pretty well in the microwave and are still very tasty!

Homemade Spaghetti-O's (can serve 6 pretty easily)

1# Pasta (our grocery store has "rings" that we use!)
1/2 onion
6 T. butter
6 T. flour
2 C. milk
28 oz can tomato sauce (or homemade)
10 oz tomato paste (or so, we use 6 oz)
6 oz cheddar cheese
6 oz american cheese (I buy this from the deli counter and get the kind without added oil, just dairy in the list of ingredients)
1 tsp oregano
1 tsp basil

Cook the "rings" or pasta per package directions.

While pasta is cooking, saute onion in the butter until the onion is soft. Add the flour, stir well, and cook for a little while until the roux starts to brown. Whisk the milk into the butter mixture. Add the tomatoes, then the cheese. Stir until the cheese is melted into the tomatoes. Add the oregano and basil, then the pasta. Eat in big bowls! Yum!
