What to do with quart of buttermilk?
I bought a quart of buttermilk, because I thought I needed it for a new recipe. Turns out I didn't need it (not sure where I got that idea from to start out with
). Anyhow, now I have a quart of buttermilk sitting in my fridge that I need to DO something with this weekend. Any thoughts or great recipes?

These are super yummy and you can substitute the blueberries for a different fruit if you want. I made some with strawberries that I chopped up and it was great.
Buttermilk Blueberry Muffins with Streusel Topping Muffins:Preheat oven to 400 degrees. -1 cup whole wheat flour -1 1/2 cups all purpose flour -1 1/2 teaspoon baking powder -1/2 teaspoon baking soda -1 cup sugar -1/4 teaspoon salt -2 eggs, beaten -1 cup buttermilk -1/2 cup canola oil -2 cups fresh or frozen blueberries -1 teaspoon vanilla Mix dry ingredients well in a large bowl. In another bowl, mix beaten eggs , buttermilk, oil, and vanilla. Mix wet ingredients into the dry ingredients until all are moist. Fold in blueberries. Spoon into greased or lined muffin cups about 3/4 full. Make folloing topping and add prior to baking. Streusel topping: -3/4 cup sugar -3/4 cup all purpose flour -1 Tablespoon water -1 1/2 teaspoons cinnamon -1/4 cup butter or margarine softened Mix all ingredients with a fork until crumbly. Sprinkle on top of muffins. Bake muffins for 20-30 minutes or until golden and toothpick comes out clean. (you will probably have some left over topping)

My husband just drinks it by the glass
I like to use it in my coleslaw. You could also do buttermilk pancakes or biscuits.

Pancakes!
Here's my grandma's recipe: 1 c. flour 1/2 tsp baking soda 1 tsp baking powder 1/2 tsp salt Blend together in mixing bowl. Add: 1 1/2 tbsp oil 2 eggs buttermilk - gently stir in, until desired consistency is reached - about like stirred yogurt? Ladle onto a medium-hot, lightly greased griddle. Flip when browned on one side, and then remove when the other side is browned. Enjoy! ![]() OR, try Apple Pie Muffins - We love these! Topping: 1/2 c brown sugar 1/3 c. flour 1 tsp cinnamon 2 tbsp melted butter Crumble together, and use to sprinkle on top of muffins before baking. Batter: 2 1/4 c flour 1 tsp baking soda 1/2 tsp salt 1 egg 1 c. buttermilk 1/2 c. melted butter 1 tsp vanilla 1 1/2 c. brown sugar 2 cups peeled diced apples. Blend flour, soda and salt together in mixing bowl. Combine buttermilk, egg, sugar, and vanilla. Gently stir wet and dry together. Add apples. Combine until just mixed - do not over mix! Spoon into large greased or paper-lined muffin cups. Top with streusel topping. Bake at 375 for 25 min. About 16 muffins.

Buttermilk keeps a reeeeeeally long time. So even if the "sell by" on the container is fast approaching, don't feel like you have to use it all up right away.

Poke holes in a roast and allow it to soak in buttermilk for several days before cooking. Makes a wonderful tender roast.
