What's for dinner this week...May 4th - 9th

Come and post

We're extra broke this week so I'll be cooking the rest of our frozen meals that 2 friends made us

Monday: Sweet n' sour pork w/ rice

Tuesday: Chicken taco soup

Wednesday: Split pea soup w/ ham

Thursday: Can't remember what else is in the freezer

Friday: MIL is buying

Saturday: Chicken taco soup

Sunday: BBQ'd chicken w/ scalloped potatoes

I've been awful about meal planning the last week or so since the baby could come soon. I don't feel much like cooking either. I did better planning for this week though since my MIL is coming tomorrow and will be here for a month.

Monday - Pork Chops with cream of mushroom soup over rice
Tuesday - Mac and Cheese in the Crockpot, Broiled Ham Steaks, Salad
Wednesday - Cheesy Beef Enchiladas, Spanish Rice, Mangos
Thursday - Pancakes, Peaches baked with Sausage Meatballs
Friday - Ham and Potato Soup, Bread, Salad, Peach Crisp
Saturday - Maybe have dh grill something
Sunday - who knows?!

I'm very thankful for diaperswappers! Three of my main course recipes have come from people on here.

Here's what we're having:

Monday: roast chicken, sweet potatoes, zucchini
Tuesday: use leftover chicken to make curry chicken and rice
Wednesday: homemade Macaroni and Cheese, Jell-O
Thursday: leftovers
Friday: make your own pizzas
Saturday: not sure yet...

I was just about to get out my recipe book and write out our meal plan- this will help me stick to it!

Mon: crispy black bean tacos- yummo!
Tues: large salad and chicken pesto pasta with parmesan cheese
Wed: chicken, broccoli and rice casserole
Thurs: red beans and rice
Fri: eat out
Sat: leftovers or lasagna from freezer

My husband is out of town until Wednesday, so the beginning of the week is pretty easy.

Today: Turkey burgers at my mom's
Tuesday: Lasagna and corn, probably some italian bread, too.
Wednesday: Probably leftover lasagna, as on Tuesday it's just me and 2 of my kids.
Thursday: Probably chicken noodle soup from our leftover chicken carcass from yesterday.
Friday: Most likely frozen pizza as it's taking up space in my freezer. Oh joy.
Saturday and Sunday: No clue yet. I haven't even had time to think about it since my husband has been gone. Life with a 2-month old is hard. Add on a few more kids and it's chaos.

Wow-I need to try planning a week's worth of menus- these look great! I am as far as dinner tonight, pasta with canned tomatoes made into sauce and fresh parmesan.

Probably at some point we will have a dinner of frozen stuffed chicken or fish that I got on clearance at Target. They had tons of seafood for half price- end of Lent sale??

Today ~ we had pizza for DD's birthday
Tuesday ~ Company over...out to eat?
Wednesday ~ Company still here...zoo and then ???? Possibly chicken stroganoff
Thursday ~ Taco bake
Friday ~ Frozen meal..whatever I find in the freezer that I can make quickly
Saturday ~ Not sure yet! Brisket in the crock pot with mashed potatoes sounds yummy! And I'm pretty sure I have one in my freezer!
Sunday ~ Mother's Day DH and the kids taking me "out"
But where do I want to go?!?! Hmmmm....

Yesterday was "Breakfast"- French toast & bacon
Tonight will be home made mac n' cheese, not sure which veggie
Friday we get take out from a local burger restaurant
Saturday probably Italian hots w/ broccoli & egg noodles
Mother's Day... Hopefully, dh will figure that out
